M&M’s Peanut Butter & Oatmeal Snack Balls

My kids eat a lot. I hear this at least 50x a day “Mom, I’m hungry!” And no they don’t say it nice & calm, it’s more of a shout-as-loud-as-I-can-because-I-might-die-of-hunger type call 🙂 It always seems to be at the most inconvenient times too…..

Like, I just sat down on the couch for the FIRST time today, and it’s 4:00 pm!

Or, I am finally making myself something to eat for lunch

I am talking on the phone, to a real adult, having a real conversation 😉

I finally have a spare 10 minutes before the baby wakes up from nap to fold the MOUNTAIN of clothes sitting on the couch

I love these little snack balls for that reason. I can make up a batch ( I always double it), leave it in the fridge and when their hunger strikes (a.k.a- every 5 minutes 🙂 ) they can just go grab one. Plus, they are yummy, filling, and healthy {I usually sneak a few too}.

I had never used wheat germ before but I really like it. It’s full of all kinds of good & healthy stuff. I had a hard time finding it in my grocery store, but I eventually found it in the cereal aisle. It comes in a glass jar.

M&M’s Peanut Butter & Oatmeal Snack Balls

Ingredients

  • 1 cup quick oats or old-fashioned regular oats (can also do some of both)
  • 1/4 cup wheat germ
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips and/or mini m&m's (I do a little of both)

Instructions

  1. Combine all ingredients into a mixing bowl and stir with a wooden spoon. This will take a few minutes because the "dough" will be very thick. It will eventually come together.
  2. Roll into balls. It will be sticky and that's fine.
  3. Place onto a plate and keep in fridge for at least 1 hour before eating. Otherwise they will be too soft.
  4. Store remaining snack balls in fridge.

Notes

Use any type of chocolate chips you want. As long as the candy add-ins equal 1/2 cup, you're good! I have used mini chocolate chips + peanut butter chips before. Sometimes I use all mini m&m's.

If I have it on hand, I will also add in some flax seed. I do 2 tablespoons wheat germ + 2 tablespoons flax seed.
