Creamy Sausage Spinach Pasta Bake

My sister had her first baby on Wednesday! Hi Cortney & Josh! I can’t believe my little sis is a mommy now and I know those two will make great parents. My kids adore their uncle Josh so I know their new little boy is in for a great & fun life.

I have a few pumpkin recipes I want to post but since my sister had her baby I decided to post this creamy spinach sausage pasta bake. If I lived closer to her, this is the dish I would take to her house for a new-mom meal. It’s the perfect family dinner, company dinner, new-mom meal. It’s a pasta bake loaded with crumbly sausage, cream cheese, creamed spinach, Italian tomatoes, and mozzarella cheese.

This is my virtual new mom meal for my sister. Is there such a thing? Probably not. But, regardless, please make this! I am not a fan of sausage but my entire family loves it. I saw the ingredients for this pasta bake and thought that maybe this is something I would even eat. And I did eat it. My family ate it and we were happy and full πŸ™‚


The only creamed spinach I could find was one of the ‘steam fresh’ packs that you cook in the microwave for 4-5 minutes. It worked just fine. I would actually suggest one of those because you can cook it in the microwave while you prepare the rest. Β I have seen creamed spinach in a box, you just want to make sure that it is thawed completely before adding it to the pasta mixture.

Cut your cream cheese block into cubes. It will melt faster and be easier to combine it all together. If you like it spicier use a spicy Italian sausage. I used a mild and it was perfect for us. The original recipe calls for only 3 cups of dry pasta (and then you cook it), but I found that it was not nearly enough. So, I cooked the entire 1 lb box and used all of it except for maybe 1 cup worth, give or take.

Creamy Sausage Spinach Pasta Bake


  • 1 box (1 lb) rigatoni pasta
  • 1 lb Italian sausage
  • 1 onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (14.5 oz) Italian diced tomatoes, undrained
  • 1 package (10-12 oz) frozen creamed spinach, thawed/cooked
  • 1 block (8 oz) cream cheese, cut into cubes
  • 2 cups shredded mozzarella cheese


  1. Preheat oven to 350 degrees. Spray a 9x13 baking dish with cooking spray.
  2. Cook pasta according to package directions. Don't forget to salt your pasta water.
  3. Meanwhile, cook sausage and onion over medium-high heat until meat is no longer pink; drain. Add in diced tomatoes, creamed spinach, cream cheese, and 1 cup mozzarella cheese. Stir together to combine. Turn down heat and let simmer until pasta is ready.
  4. Drain pasta and add into the sausage mixture. Stir together and pour into your baking dish. Cover with foil and bake for 25 minutes.
  5. Uncover, sprinkle remaining 1 cup cheese over top and return to oven to cook for 10 minutes.
