Oven Baked Chicken Fajitas

Strips of chicken breasts and colorful, sweet peppers covered in a flavorful marinade and baked. So easy and simple! Serve with some corn and flour tortillas, guacamole, pico de gallo, shredded cheese, and sour cream.

 These Oven Baked Chicken Fajitas are one of our faves. I’ve made them more times than I can count and they always come out delicious.

Slice some boneless, skinless chicken breasts, sweet peppers, and onion and place in your baking dish. Mix together the marinade ingredients, pour over the veggie & chicken mixture and stir together.

After the fajita mix cooks this is what you’ll end up. Perfectly flavored (with no seasoning packets!), tender chicken and veggies. Load up corn or flour tortillas with the fajita meat and top with some pico de gallo, shredded cheese, guacamole, and sour cream. Seriously, yummy!

For the guacamole I mash 2 avocados, squeeze half a lime, and add a pinch of kosher salt. Super simple, not spicy, delicious, creamy, and the kids will eat it 🙂

For the pico de gallo I seed 4 roma tomatoes and dice up, add 1-2 tablespoons diced red onion, some chopped cilantro, squeeze half a lime, and a pinch of kosher salt.

Both these are simple, pair well with the chicken fajitas, and taste so fresh.

Oven Baked Chicken Fajitas

Liquid smoke can be found with the condiments at the grocery store; ketchup, mustard, bbq sauces, etc. It comes in a small bottle.


  • 2 chicken breasts, cut into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 orange or yellow bell pepper, sliced
  • 1 onion, sliced thin
  • corn or flour tortillas
  • garnishes: guacamole, cheese, sour cream, pico de gallo
  • marinade
  • 1/4 cup fresh squeezed lime juice (about 1 large lime)
  • 1/3 cup water
  • 2 tablespoons vegetable or canola oil
  • 2 garlic cloves, minced or pressed
  • 1 teaspoon kosher salt
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons soy sauce
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper


  1. Preheat oven to 375 degrees. Spray a 9x13 baking dish with cooking spray.
  2. Place sliced chicken and vegetables into the baking dish, mix to combine together.
  3. In small mixing bowl, combine all marinade ingredients and whisk together. Pour over the chicken/veggie mixture and stir together to combine and coat in the marinade (it's easiest if you use clean hands to mix).
  4. Cook for 30-40 minutes or until vegetables are tender and meat comes to temperature.
  5. Serve in tortillas with the garnishes you choose.

I just recently got the above garlic press and it has changed my life! Makes chopping garlic so much easier. just drop it in the mincer, squeeze, and you’re done! I often wonder how I ever lived without it in my kitchen 🙂
