Southwest Chicken Rice Bowls

4 Ingredients is all you need to make flavorful southwest chicken in the crock pot. Add some cilantro lime rice + tomatillo ranch dressing and you have a delicious dinner. We love to crunch Fritos chips on top, or use the Fritos as a scoop πŸ™‚Β

I realize that yesterday I promised you all that I would post candy bar pie…. I know, it sounds ridiculous, but it is the perfect way to use up leftover Halloween candy, impress your kids, and make their dentist mad all at the same Β  Β  Β time πŸ˜‰ Kidding.

Why just eat a chocolate bar plain when you can make a pie out of it.

So, instead of that I am posting these Southwest Chicken Rice Bowls in honor of my new niece! Just 2 weeks ago I posted a “virtual new baby dinner” for my sister who had her baby boy (check it out here, it’s delish). So today I post this as my way of giving them dinner. I know I’m not technically bringing it to them, but If I did not live on the other side of the country than I would be.

I love this because the southwest chicken is only 4 INGREDIENTS + some spices. Spices don’t count right? Cause I like the sound of 4 ingredients! It has tons of flavor, is super easy, and the best part is your house will smell like a Mexican Restaurant.

I make the Tomatillo Cilantro & Lime Ranch Dressing in the morning and leave it in the fridge until dinner time. All you have to do is throw the ingredients in the crock pot for the chicken and let it do all the work and then cook up some Cilantro Lime Rice. That’s it. I love to put all the components in different bowl; southwest chicken, Fritos (it’s a must, if you’re wondering…), and the tomatillo dressing. Then people can make their own “bowls”.

We love using the Fritos as scoops and we also like to crumble the Fritos on top of everything like croutons on a salad.


This is also a really good meal to take to someone. Just package everything separately in containers and take it over. Everyone will love making their own.

We had no additional toppings on ours. You could add some shredded cheese, sour cream, green onions but we loved it just the way pictured.

Funny behind the scenes story….. I threw away the cilantro and the lime and when it came time to take the picture I realized I needed it! So, yes, the cilantro you see in the two pictures above was taken from the trash πŸ™‚

Southwest Chicken Rice Bowls

The southwest chicken will have some liquid, just use a slotted spoon to take it out of the crock pot and into the serving bowl. You still want some liquid with the chicken but not soup.

  • 1 1/2 lbs chicken breasts, about 2-3
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 1/2 cups frozen corn (or 1 can corn)
  • 1 jar (16 oz) salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • rice bowls
  • Friots chips
  • cilantro lime rice
  • tomatillo cilantro & lime ranch dressing


  1. Mix together the black beans, corn, and salsa in a bowl. Pour into your crock pot.
  2. Place chicken breasts on top (I cut mine in half) and then sprinkle with the spices.
  3. Cover and cook on low for 6-7 hours.
  4. Shred the chicken with two forks inside the crock pot.
  5. Prepare the cilantro lime rice and tomatillo cilantro & lime ranch dressing.
  6. Serve with fritos!
