Can you believe Christmas is this week?! My kids are so excited πŸ™‚ I think one of the best things about being a parent is the excitement and the awe of Christmas morning. One of my most favorite days of the year.

The other day on Facebook I shared these CREAMY CARAMEL PECAN CINNAMON ROLLS. They’re on my menu plan for Christmas morning. They are so delicious and they can be made the night before and then you bake them in the morning. The best part, only a few ingredients and one of those is frozen bread dough.

Speaking of Christmas week, it’s always sooooo busy. We have a gingerbread decorating party, a Christmas Eve program at preschool, school parties, and my mom is coming so we’ll be making the long trek to the airport….. oh, and Santa comes too πŸ˜‰

With the week being so busy this beefy minestrone soup is perfect for a weeknight meal. It’s so warm, hearty, and comforting, and comes together within 30 minutes.


Β This recipe does use cans of soup, and while I don’t use them often, they actually work perfect in this recipe because they are convenient and help bring this soup together fast. This is also one of those recipes that uses pantry staples (well beside the ground beef, of course!) so it’s the perfectΒ i-forgot-to-grocery-shopΒ kind of dinner.


I think everyone needs a recipe that just comes together fast. Nothing fancy or time-consuming. Just easy and simple. You can garnish this with parmesan cheese, but be careful because I found the soup salty with the parmesan cheese. Green onions are also a nice garnish for this soup.

Beefy Minestrone Soup

If you are watching your sodium just use the water called for. If you want a little bit more flavor, use 1 cup vegetable broth + 1 1/2 cups water (as called for in recipe).

Use any variety of diced tomatoes; green chilies, green pepper & onion, chili style. The possibilities and choices are endless.


  • 1 lb ground beef
  • 1 yellow onion, finely diced
  • 2 cans (10 3/4 oz) minestrone soup (do not prepare)
  • 2 1/2 cups water (or 1 cup vegetable broth + 1 1/2 cups water for more flavor)
  • 1 can (10 oz) diced tomatoes, any variety


  1. In large soup pot over medium-high heat brown ground beef and onion until beef is no longer pink. Drain. Return to pot.
  2. Add the minestrone soup, water and/or vegetable broth, and diced tomatoes.
  3. Bring to a low boil, reduce heat to medium low and let simmer for 15-20 minutes. The longer the better.

I hope your Monday is great! I have about a million errands to run. Well, to be honest, I have tons of returns to make…. because when I took inventory of Christmas presents, ummmm, I had wayyyy too much πŸ™‚ —–> I do this every year and my husband just rolls his eyes. Please tell me I’m not the only one that does this! I will be driving to just about every store and returning stuff. Yay….. πŸ™‚
