Black Bean Corn Salsa

This black bean corn salsa is so easy & simple! A few ingredients combined with a jarred salsa and you have an addicting and completely delicious chip dip. And, bonus, there is NO CHOPPING! Can’t beat that.

If you’ve read my blog for a while now you’ll know that I have a slight obsession with salsa recipes and dips! They are easy to make, use fresh ingredients, makes enough for a crowd, and they’re perfect for leaving in the fridge and snacking on for a few days….. or for eating for lunch (like I usually end up doing 🙂 ).

I have thinking about this recipe ever since I saw it over at the blog 5 boys baker. Which, by the way is one of my favorite blogs to follow. The desserts and food she shares are To. Die. For!

The other day we went up into the mountains to some land that my family is thinking about buying. Now, I’ll be honest and say that this is so not my normal environment. All the dirt, the rugged roads, the almost-impossible-to-drive-to location. But, I did take this salsa and some tortilla chips and it was a hit! So, I guess that made the trip more worth it.

I LOVE this recipe because you take a few easy ingredients and add them to a store-bought jar of salsa. This salsa comes together in minutes and will disappear just as fast.

I would normally choose the ‘mild’ version of the picante sauce but my grocery store was all out, so I ended up getting ‘medium’ heat and it was not bad at all. My kids thought it was a bit spicy so next time I will just use ‘mild’. As far as the avocados, the recipe states 2-3 and I used 2 this time because they were $1.50 each! My cheapness took over me and I only bought two. Next time I will do 3 because we LOVE avocados around here.

On a side note: I just about died when my little girl could not wait any longer to dip a chip 🙂 Luckily, I snapped a photo and caught this sweet moment that I wanted to share with y’all. She loves being my photo assistant and loves eating the food as she helps me.

Black Bean Corn Salsa

Be sure to get the PACE PICANTE SAUCE. It looks similar to the pace picante salsa. But, we want the sauce.

If I grate my own cheese I will use the 1 1/2 cups but if I use a bag of pre-shredded I will just throw all 2 cups into this so I don't waste the remaining.

Ingredients

  • 1 jar (16 oz) Pace Picante Sauce {mild, medium, or hot}
  • 1 can black beans, drained and rinsed
  • 1 can (15 oz) white corn, drained well
  • 1 1/2 cups grated cheddar cheese'
  • 2-3 avocados, diced

Instructions

  1. Combine all ingredients into a mixing bowl and gently stir to combine.
  2. That's it. So easy and no chopping!
