Most of the time I get recipe or food inspiration in the weirdest ways. Like on Sunday when I was looking through the ads in the newspaper and I came across the Target ad. And right there was this beautiful picture of all their fresh berries. On sale! As if that wasn’t enough, I have been craving fresh fruit lately like crazy, and of course the ideas started churning in my head of this raspberry cheesecake fruit dip.

We’re spending some time at my parents house this summer and they took my two oldest our for the day, so naturally when I don’t have all my kids, I go shopping! It’s funny how much easier it is to go shopping with one kid instead of 3! My littlest is a good little shopper as long as she has some food to eat 🙂 The other two not so much. My son wants nothing to do with stores, shopping, or his sisters and mom. And, my 4 year old girl just begs for Shopkins all. the. time! Which makes me tend to want to hurry as fast as I can to get out of the store before the crying and whining starts.

Thankfully, I got everything on my list and came right home and whipped this up and then ate it for lunch 🙂

The trick to not getting those "lumps" in your cream cheese fruit dip is to make sure that the cream cheese bars are very softened. Either microwave (don't melt or let get hot) or leave out on the counter for 2-3 hours before using.

TIP:to keep apples from turning brown place the sliced apples into a bowl, cover with cold water and then squeeze the remaining lemon (from the recipe) into the water. Let sit for 3-5 minutes and then place on serving plate.

  • 1 block (8 oz) cream cheese, softened
  • 1 container (6 oz) red raspberry yogurt
  • 2 teaspoons fresh lemon juice
  • 3/4 cup powdered sugar
  • 1 tub (8 oz) cool whip
  • 1/2 cup mashed fresh raspberries

  1. Combine cream cheese, yogurt, lemon juice, and powdered sugar in a mixing and blend together using a hand-held blender.
  2. Add in cool whip and fold in with a spatula until combined.
  3. Add mashed raspberries and gently fold into the fruit dip with the spatula.
  4. Serve with your favorite fruits!
