 Summertime at my house means one thing. ICE CREAM! If I don’t have ice cream in the freezer for my 3 kids, oh boy do I hear it from them. It’s like their mandatory afternoon snack every day. That’s why I was so excited when Blue Bunny® Ice Cream came out with their all new packaging design. Have you guys seen it in stores? I love the new clear packaging and the best part is that you can see the flavor swirls in every single variety!

Today I am sharing this delicious, creamy, cool Caramel Crunch Candy Bar Ice Cream Pie using Blue Bunny® Homemade Vanilla and Smucker’s Sundae Syrup Caramel Flavored Syrup.

Most days it is way too hot & humid to even go outside so it was a fun activity for me & the kids to make this special candy bar ice cream pie together. That’s the great thing about this recipe; anyone can make it. My kids loved crushing up the chocolate candies and my oldest had a fun time “showing off his muscles” as he mixed the ice cream mixture together 🙂 The finished product looks and tastes like you spent hours, but really it’s just a few minutes in the kitchen. Most of the time is freezer time and you let the freezer do all that work!

 You have to see the layers in this pie. The best part is that shortbread cookie crust. You just crush up some shortbread cookies (either in a ziploc bag or a food processor) mix it with some melted butter and then cook it so it can come together and form a nice, thick crust. Then there is a layer of melted chocolate which hardens up nicely in the freezer and provides a chocolatey crunch. The star of the show is the Blue Bunny® Homemade Vanilla Ice Cream mixed with the caramel syrup and chunks of candy bar. Top it all off with a drizzle of more caramel syrup and more chopped candies and you basically have perfection on a plate 🙂

Don’t let summer leave without making this. But be careful, because once you pull it out of the freezer it melts fairly quickly. Which won’t be a problem because this thing will be gone so fast 🙂

Caramel Crunch Candy Bar Ice Cream Pie


  • 2 1/2 cups crushed shortbread cookies
  • 4 tablespoons butter, melted
  • 3/4 cup chocolate chips (semi-sweet or milk)
  • ice cream pie
  • 1 container (48 oz) Blue Bunny® Homemade Vanilla Ice Cream
  • 2 cups chopped caramel chocolate candy bars
  • 1/2 cup Smucker's Sundae Syrup Caramel Flavored Syrup
  • topping
  • 1 cup chopped caramel chocolate candy bars
  • drizzle of Smucker's Sundae Syrup Caramel Flavored Syrup


  1. Heat oven to 350 degrees and lightly spray a 10" springform pan with cooking spray. You could also use a 9x13 baking dish.
  2. Crush up the shortbread cookies using a ziploc bag and a rolling pin to crush, or use a food processor. Combine the cookie crumbs with the melted butter, mix together until combined and press into your prepared pan. Bake for 15 minutes and let cool completely.
  3. Once cooled, melt your chocolate in a microwave safe bowl for 2 minutes, stirring every 30 seconds. Pour onto your crust and then put it in the freezer for 20-30 minutes to let harden. While the chocolate is hardening in the freezer, pull your Blue Bunny® Homemade Vanilla Ice Cream out and place it on the counter so it can soften.
  4. In a mixing bowl, combine the softened ice cream, caramel syrup, and chunked candy bars and mix together. Pour over the chocolate layer and smooth out evenly. Sprinkle the additional chopped candy bars on top of the ice cream. Put in the freezer to let harden for at least 4 hours. When ready to serve, drizzle additional caramel syrup over top.
