GROUND BEEF COUNTRY CASSEROLE

This ground beef country casserole is a one dish comfort food casserole with ground beef, egg noodles, golden mushroom soup, tomato soup, cheese, and spices. 

If you love using shortcuts like condensed golden mushroom soup and tomato soup then you will love this casserole. If you just can’t get past the idea of mushroom + tomato soup then it’s probably not for you. I’ll be honest and say that I have been surprised by this ground beef casserole. I posted it when I first started this food blog of mine back in 2015. It quickly became the most popular recipe and has gone viral on Pinterest several times.

INGREDIENTS NEEDED FOR GROUND BEEF COUNTRY CASSEROLE

Ground Beef

Garlic Powder, Salt, & Pepper

Egg Noodles – Cook these according to package instructions. 

Tomato Soup

Golden Mushroom Soup – This is a condensed soup, like cream of mushroom soup, but it’s a tomato based one. The color is darker like tomatoes. If you can’t find it then use regular cream of mushroom soup. But the tomato based golden mushroom soup really compliments the tomato soup and provides a lot of flavor. 

Dried Minced Onions – If you prefer fresh onion then finely dice an onion and add it in with the ground beef. I would use a yellow or white onion for this recipe.

Whole Milk – It’s best to use a higher fat milk like whole milk for this recipe. 2% would also work just fine. 

Worcestershire Sauce 

Parmesan Cheese – It’s best to grate your own from a wedge of parmesan cheese. The cheaper grated parmesan cheese in the green can is much saltier than fresh shredded. 

Shredded Colby Jack Cheese – You could substitute this with any cheese you prefer.

MY TIPS FOR THIS RECIPE

  • As you can judge from the comments people either love it or hate it. I have made this recipe countless of times to see if I could improve it and while I have changed the way you cook and prepare this casserole, I have not changed the original recipe. So if you’re coming here and noticing the new pictures, don’t worry, it has just been updated with better pictures and the recipe has been rewritten to help with the ease of preparing the recipe. Chances are is that if you don’t like using cream of something soups, you don’t like the mushroom + tomato combo, and you don’t like traditional casseroles then you probably won’t like this dish. 
  • To prevent the egg noodles on the side of the casserole and the top from browning while baking feel free to cover the pan with tin foil.
  • I have never frozen this casserole but I am sure it would freeze just fine. I always suggest double wrapping anything you freeze. One layer of saran wrap covered with a layer of tin foil. I also prefer to use the disposable aluminum pans if I know I am going to be freezing something.

Ingredients
  

  • 1 bag (12 oz) wide egg noodles
  • 1 lb lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (10.75 oz) condensed tomato soup
  • 1 can (10.75 oz) golden mushroom soup
  • 1 cup whole milk
  • 2 tablespoons dried minced onion
  • 2 teaspoons Worcestershire sauce
  • 1/2 cup shredded parmesan cheese
  • 1 cup shredded Colby Jack cheese or more if wanted

Instructions

  • Heat oven to 350 degrees and spray a 9x13 baking dish with cooking spray.
  • Cook noodles according to package instructions.
    * When the noodles are done drain them but do not rinse them.
  • In a skillet pan, over medium-high heat, brown ground beef with the garlic powder, salt, and pepper. Brown and crumble until the beef is no longer pink.
  • In a large mixing bowl, add the drained & cooked egg noodles, ground beef mixture, tomato soup, golden mushroom soup, milk, dried onion, Worcestershire sauce, and parmesan cheese. Stir together until it's well combined.
  • Evenly spread into the prepared baking dish. Cover with tin foil (or leave it uncovered if you want the crunchier baked egg noodle pieces on the top).
    Bake for 20 minutes.
  • Take out the casserole and add the shredded cheese on top. Bake for about 5 more minutes or until cheese is melted.

Notes

Golden Mushroom Soup : The can of golden cream of mushroom is important to this dish. It's like the cream of mushroom soup (in fact it will be right next to it in the store) but it's a tomato based mushroom soup which pairs well with the tomato soup. Yes, you can use regular cream of mushroom soup but the flavor of this casserole is in the golden cream of mushroom soup.
Onion : Some may prefer fresh onion. If that's that case then finely chop it up and cook it with the ground beef and spices. 
Recipe changes : The only change to the original recipe is the addition of the Colby Jack cheese on top of the casserole. It provides some needed flavor and makes it really cheesy. I did change up the process of preparing the casserole to increase the flavor of the final dish.

I also use golden mushroom soup when I make cubed steak…. Starts out in cast iron skillet and then finishes in oven low and slow. The steak ends up so tender you don’t need a knife.     4. I love this! My 101 YO grandmother passed her recipe down to my mom, then me. Same as yours, but whatever cheap meat she could find at the store, usually round steak that she cut up into thin strips. She always added red and green peppers too to the skillet.   4. I made this for dinner tonight. It looked great in the pan. It tasted just ok. The Worcestershire sauce, in my opinion, gives it a funny, almost sour taste. I served it with corn along side, and my family stirred their corn into the casserole, saying they preferred the taste that way….a little savory and a little sweet with the corn. It definitely needed some texture. If I made this again, i would omit the Worcestershire sauce altogether, and stir in corn before baking. Also, I think I would omit the tomato soup and use two cans of the golden mushroom soup. I had never tried that before, and it has really good flavor. Thanks for sharing the recipe.

  6. It looks good, but my husband is allergic to mushrooms, Could I substitute something in place of the cream of mushroom. Most of the time I use cream of celery or onion.

      Hi Amanda. I think it would be just fine to use cream of celery or any other creamed soup. I have only used the golden mushroom soup so i don’t know how the taste would be affected with the other kind of creamed soup. Let me know if you try it 🙂

        To get the added flavor that the Golden Mushroom soup gives add a tablespoon of beef Better than Bullion to the cream of celery or other cream soup. Used this trick often and it has always been good.

      You don’t have to but I prefer it because otherwise some of the noodles (on the sides) will harden during the baking time. It’s totally up to you though 🙂

  13. Don’t have the golden mushroom soup but do have cream of mushroom. Assuming it would be ok to make that substitution? Aware there may be a slight taste difference. Would that be only difference with this substitution or do I also need to add/remove something else?

      You could use cream of mushroom. The only difference is that the Golden Mushroom Soup has a tomato taste to it. They are essentially the same thing just a slightly different taste. You would not have to add/remove anything else. I hope you love it 🙂

  20. Made this tonight. It’s similar to a casserole my mom used to make with breakfast sausage tomato soup and cheddar cheese. This was very good (I doctored it up a bit) but I prefer the breakfast sausage and will use that next time. I also added sautéed mushrooms and really liked the flavor of the golden mushroom soup! Love to try new recipes!

      It makes a 9×13 baking dish so I would say it would serve 6 adult sized portions. In my family we have 4 kids (only 3 that eat) and then my husband and I. When I make this there are leftovers and enough to fill us all. 6 adult servings comfortably but if you serve it with sides you could probably get 8 adult servings. I hope that helps. Enjoy 🙂

    My family really enjoyed this dish!!! It was incredibly easy to put together! I ended up using fresh onions and garlic because I forgot to buy the flakes and powder. Other than that little change I followed the recipe exactly and it was delicious! My picky eaters even asked for seconds, which is pretty rare! I can’t wait to have leftovers for lunch tomorrow!   24. Okay I tried this tonight and my picky picky kids DEVOURED IT!!!!!! No complaints, it was a miracle!!!! I did however make a few adjustments since my husband will not touch a mushroom with a ten foot pole. I browned my beef with a minced onion, and three cloves of garlic. That’s right, three. We love our garlic, don’t judge. I then found, wait for it… cream of bacon soup. Bacon people!! Cream of bacon friggen soup, was not even aware that was a thing. What a thing indeed! So in short I substituted golden mushroom soup for cream of bacon and the result was nothing short of Devine. Deeevine. I finished with shredded provolone on top and my kids requested I pack the left overs in their lunch for tomorrow. What?! They want left overs for lunch?! Unfreaking heard of! You girl, are my hero. This was a win! Thank you!

  26. I made this tonight for dinner. It was wonderful! I couldn’t find the golden mushroom soup but using the regular mushroom soup worked fine. I did not cover when baking and I thought it gave a nice subtle crust on the top. This one is a winner! Thank you for sharing this recipe!

  27. Hi! I found your blog a couple weeks ago and saw the tomato beef country casserole recipe. I thought it sounded something my whole family would like. I have 4 kids plus my husband. I finally made it tonight but forgot to get worcestshire sauce. I just added extra seasoning. Everyone loved it…. including my 16 y.o. who informed as I was in the process of making it, that she didn’t really like casseroles. She took the biggest helping of it when it was done. ?
    I added green beans to the mixture so I had the protein, veggies and carbs all in one dish. We all enjoyed this recipe and it will definitely become a regular meal in my house. Although, it was great without the Worcestershire sauce, I will add it the next time just to taste the difference.

          I think you could, yes. I’ve never done it so I can’t say for sure how the end result would be. Fettucine noodles are denser and thicker so they may not soak up the sauce as much?? Or, they’ll be fabulous and I am wrong 🙂 Worth a try!

    i made it last night and tossed all the leftovers. I should have read more of the comments before I made it. I admit I did pick up regular mushroom soup instead of golden, but I think it was the Worcestershire sauce that killed it for me. So, maybe i will give it another try with Golden Mushroom and season the meat with real diced onion instead of dried and leave out the Worcestershire sauce, or use less. I am usually not opposed to Worcestershire sauce, but maybe it was too much for my taste. It seemed to be all I could taste.

  35. I made this for dinner tonight. I loved that it went together very easily. I used only 1 tablespoon of worchestershire because of the sodium content. I added a little red pepper flakes for some heat, fresh onion for the taste and more garlic than what the recipe called for because I cook a lot with garlic and thought it could use a little bit more flavor. I think next time, I would add corn for a little more color.

    I made this but couldn’t find cream of golden mushroom soup. I found golden mushroom soup and it worked out fine. I added petite diced tomatoes to recreat the dish I remembered ffom my elementary school cafeteria. Delicious and reminiscent.

    Before I praise your recipe, I should explain that I’ve had little to no appetite for about 9 months now. I’ve even made my favorite comfort foods, took about 4 bites and just couldn’t make myself eat it. Most of the time it tasted like cardboard.

    Your recipe though, was fantastic. I don’t like condensed tomato soup (too sweet to me) so I used a large can of diced tomatoes and a few spoonfuls of tomato paste. I completely forgot the Worchester sauce, but will try it next time. No cardboard taste (Yay!) No taking several bites only to find it tastes like nothing (Yay.)

    The boyfriend loved it, I loved it, and even my parrot Elmo loved it. It was great with ground beef, but I’m tempted to try it with Italian sausage next time.

      You could but I can’t guarantee that the casserole would turn out the same, flavor wise. If it helps at all, I hate mushrooms but this casserole I can eat just fine even with the golden mushroom soup in it.

I could even run home and add the noodles later in the day if you’d suggest. How would you suggest adjusting liquids, noodles etc.

      I honestly don’t think this would work in the crock pot. There is not enough liquid and I have never been a fan of noodles in the crock pot. You could always experiment. I wouldn’t even know what to suggest as I have never tried it. Sorry!

    The flavor was alright, but I saved the leftovers in a freezer bag and labeled it “grandkid food, for their next visit.

    I have a question, you say golden mushroom soup. Is it the same as condensed golden mushroom soup? I’m hardly the cook and have no idea. But this looks amazing!!!!

      Yes. On the label it just says Golden Mushroom Soup. But it comes in the same can as the other condensed soups (cream of mushroom, cream of chicken, etc.). You will find it by the cream of mushroom soup at the grocery store. Good luck and I hope that helps you 🙂

      1. Made this tonight…..huge hit, everyone loved it. Hubs wants to try more Worcester sauce (I used the 2 teaspoons). Also my can of golden mushroom was 10.50 not 10.75 so I put in a little more milk. My mom liked it which she does not care for tomato soup.

  48. This was pretty good. I used ground turkey because we just had ground beef the night before. I couldn’t find golden mushroom, so I used cream of mushroom with garlic. I also added a can of diced tomatoes which I think worked. If I make it again will probably add some more spice, maybe Italian seasoning.

    2. Update: Finally found the Golden Mushroom soup and I agree…it does make a difference in the flavor! I added peas (frozen that I put in a small colander, ran hot water over to thaw them and then added to casserole before baking). Now it’s a one dish meal. We still leave the cheese off as we like the moister consistency…and I’m now in the habit of doubling the recipe because the family requests the leftovers! Thank you, thank you, thank you!!!

    This was absolutely delicious! Usually my husband and I aren’t a big fan of casseroles, but we both thought it looked good so I gave it a shot. When I started mixing the ingredients together we both thought it wouldn’t turn out to be honest! It was amazing! Simple, quick, and tasty.   56. I made this casserole for dinner for three people. Everyone said they weren’t really hungry, yet we ate the whole thing! I loveeee mushrooms so I sliced some up and cooked them with regular onions and the beef before mixing with the soup. This is definitely a recipie I see myself making many, many times!

    I made this tonight. Hubs & I never eat mushrooms. We don’t care for them. But I figured it’s not like there is a ton of mushrooms in the soup. We probably wouldn’t notice them all that much. I thought this was yummy in spite of the mushrooms and happily ate with gusto. So good 🙂 Hubs was eating large spoonfuls, and then he spotted the mushrooms!! He said he knew he tasted them in there! He won’t be eating this again, but I will definitely keep this recipe as I enjoyed it. I just won’t make it when he has nothing else to eat in the house. It is comfort food at it’s finest in my opinion!

  63. Hi, haven’t tried this yet (but I will, sounds wonderful!) & when I do I hope I find the golden mushroom soup. Have never seen it (or as others said the cream of onion OR cream of bacon!) but I will pick out the ‘shrooms, not a fan of the texture. Question, have you prepared this in a casserole style crock pot? I would think it would work & I think if the noodles were left uncooked when assembling they might not be mushy at the end. Thoughts?

      I honestly have no idea about cooking this in a casserole style crock pot. I am not good at converting stove recipes to crock pot especially when they involve pasta. Sorry I can’t help more. I have never found cream of onion or cream of bacon in the store either. Enjoy! I would definitely wait to make it until you find that golden mushroom soup. It’s really good!

      Yes me too! I love this recipe because even if someone thinks that it’s “tasteless” you can easily change it up and add different seasonings and what not. Or fresh onion and garlic, etc. I agree, the golden mushroom is the key to this casserole for sure.

    I’ve made this a couple times following the exact recipe, but today I wanted to use up some things we had in the kitchen that I thought would be good to use! I used Medium Shell pasta instead of egg noodles, 1/2 cup heavy cream instead of whole milk, sauteed some fresh mushrooms with salt, pepper & onion powder and added some leftover canned peas I had. It is SOOO good. I also like to add French’s fried onions on top for a yummy crunch. Thanks for this awesome recipe! 🙂

    Oh my goodness!! So easy and yummy! Saw this recipe some time ago, looked at stores until I found the Golden Mushroom, I found it but didn’t have the tomato soup, so just used the 2 cans of golden. Also, sautéed onions chopped finely and fresh minced garlic to the meat. This is super easy, and affordable! Wife and I loved it! I also added dollop of sour cream when served. Thanks for a keeper!!

  70. We love garlic, so I used about a tablespoon garlic powder and a big heaping teaspoon minced garlic. I added twice the pepper, 1 tsp wors. sauce and put in 1/2 cup of parmesean in with mixture, along with italian cheese on top. Used condensed mushroom soup. Delicious! Thank you for this recipe.

    First of all this recipe is GOOD and don’t subtract or add a thing to it. Don’t let NOBODY tell you to take the WORCESTERSHIRE out of this recipe. That is what gives this recipe it flavor. Someone must have put too much in their casserole because if you over do it it will have a strong over powering taste.

    Made this last night and improvised a little bit based on what I had on hand and what I was in the mood for 🙂
    I used 1/2 pound ground beef, 1/2 pound Italian sausage and a can of tomato sauce instead of tomato soup.
    I also added a bit of cheddar cheese in there and some Italian seasoning.
    My husband and 3 year old loved it and asked me to actually write down what I did this time 🙂
    I would think adding some zucchini in with the meat while browning it would make a great addition!
    GREAT with a glass of red wine by the way!!!!

      I know what you mean. You can do either one. I usually like to cover casseroles with noodles in them cause my kids don’t like the dry/crispy edges of the noodles on top. But you can also just leave it as is. Either way works fine.

  78. I’ve made a very similar recipe for over 40 years. The recipe was shared with me by a couple of elderly ladies who immigrated to the US in the 1920s. Their recipe is nearly identical with the following exceptions: 1 can of cream of regular mushroom soup, 1 small diced onion instead of dried onion, and shredded Velveeta cheese was the only type of cheese they used. It’s been a family favorite!

    This casserole definitely exceeded my expectations. I needed something that I could put together quickly and with what I had on hand. I can’t eat mushrooms so I used cream of onion soup (Campbell’s) instead. It’s hard to find sometimes, but larger Target stores tend to have it. And then I didn’t have milk in the fridge so I used one cup of evaporated milk which is a pantry staple for me. Other than those two items, I followed the directions exactly as written. The results were delicious.

    I love that it’s fast and easy to prepare. No chopping onions or anything else for that matter. I’m going to make sure to have the ingredients for this on hand for when I need a quick and delicious meal. I’m actually going to double the meat and take it to a family member battling cancer. It doesn’t need the extra meat, but I just want her to have extra protein as she goes through chemo.

    We have a winner! My husband brings his lunch to work every day but didn’t have time to meal prep, so he asked me to make him something. He honestly cooks for me more than I cook for him, so i wanted to try something new and something to impress him. Thank you for elaborating on the golden mushroom soup-i thought it was just fancy cream of mushroom soup and would have just bought that. I think it would have been too tomato-y for this taste if i did the tomato soup, so I did the 2 cans of golden mushroom soup, like others suggested. i also added some sliced mushrooms. I didn’t add any garlic or onion (he doesn’t like them…sigh) and I felt like this tasted like a hybrid of Chef Boyardee and beef stroganoff, which I bet would be a big hit with kids. And husbands whose taste buds are like a child’s :p

    Hi. Made this recipe today and was pleased with the final dish. Being a fan of golden mushrooms soup, decided to try it out. I did cook down chopped onion, bell pepper, and garlic, with the ground beef. Both types of cheese are very necessary. I do think that the addition of salt in the pasta water is very much needed in this recipe. Thank you for posting!

    2. This sounds like a casserole we’d really like but I have a question… Do you think tomato sauce would work in place of the tomato soup? There’s something about that doggone soup that doesn’t get along with me from smell to taste.

        I totally understand! Canned tomato soup has more liquid than canned tomato sauce so I would do about 3/4 a can of tomato sauce and the rest water. Let me know how it turns out!

    For those of us who hunt, these recipes would be great using venison. I have to always use ground venison in a casserole because the meat is so lean. When your family harvests several deer you need good recipes. I try to can a couple of deer a year and then I always have access to cooked, tender meat and a delicious gravy. Just wanted to add ideas for busy cooks!
