This recipe for bbq beef ranchero tacos has a bit of story behind it. I love when recipes have a meaning or a memory tied to them. Our 8 month old is teething really, really badly. Like he has 8 coming in at one time and they literally take months and months to even break through. It’s torture really. Not sure if it’s more torture on the little guy cause of the pain, or more torture for the parents (aka- me!} to deal with the fussiness and lack of sleep.
He has always been a really good sleeper since he was little. Sleeps all night long with no problem which is really good cause I am not as young as I was with our first child when I could function off 2 hours of sleep a night. Anyways, since teething he has been waking up at least 2-3 times per night just to be cuddled and rocked.
He’s our last one so I guess you could say I spoil him more than I did the others. So being the nice mommy I am (my older kids tell me otherwise) I wake up with him and rock him back to sleep. During this time I like to browse recipes online. I have found so many favorites from these quiet hours I have in the middle of the night. Like these tacos 🙂
These bbq beef ranchero tacos combine two of our favorites; bbq and tacos! You end up with super flavorful beef taco mixture that is infused with baked beans, Mexican food seasonings like cumin, garlic, and chili powder, and then bbq essentials like bbq sauce, ketchup, and mustard.
It may sound like an odd combination but I promise you that everyone will LOVE these tacos!
The bbq beef taco mixture cooks up in one pan and while it’s simmering you can prepare your toppings. Shredded cheese is a must but you could also add guacamole, sour cream, green onions, jalapenos, pico de gallo, salsa, etc. Really anything goes with these. You could even add an extra drizzle of bbq sauce.
This is a super quick and easy dinner that can be on the table in about 20 minutes. You seriously can’t beat that!
The most important thing to remember is to use a bbq sauce that you absolutely love. That flavor really shines through in these tacos. The recipe calls for baked beans so just choose your favorite. You could do original, bacon, smoked, hickory, etc. Lots of choices at the grocery store so just pick your favorite.
At first I thought these tacos were too sweet but when you top it with all the toppings it really balances everything out. Sweet is not a bad thing though when you’re feeding kids. The more something tastes like candy the more likely they are to eat it 🙂
Yields 8-10 tacos

- 1 lb lean ground beef
- 1 can (15 oz) corn, drained
- 1 can (16 oz) baked beans, do not drain
- 1/3 cup BBQ sauce
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- corn taco shells & taco toppings of choice
- In a large skillet pan over medium-high heat cook ground beef until no longer pink, crumble beef as you cook it. Drain and return to pan.
- Add in the remaining ingredients and stir together. Bring to a low boil and then reduce heat to medium-low and let it simmer for about 10-15 minutes.
- Serve with taco shells and taco toppings of your choice.
