Happy Weekend! I’ve been doing some blog organizing and I have decided to move the weekly menu plans to Friday. I have gotten some feedback from a few people that would prefer that. Plus, I have had trouble getting this menu plan posted the past couple of weeks. Weekends are always so busy and I feel like I’m playing catch-up every second. 

Hopefully posting on Fridays will make it possible to get it up every week. 

Do you have any fun plans this weekend? We’re going to spend a few hours cleaning the church that we attend. And after spending most of the day doing laundry yesterday, I have also decided that I am going to teach my kids how to turn their clothes right side out BEFORE they put it in their laundry basket. Seriously, laundry took so long because Every. Single. Thing was wrong side out.

CREAMY GARLIC PARMESAN PASTA

This is my go-to meal when I don’t know what to cook or the pantry is bare. It can be on the table in 20 minutes! I love to serve this with a bagged salad that I add cherry tomatoes and chopped cucumbers to. Be sure and use fresh parmesan for the best taste. 

Chicken fajitas are baked in the oven and only one pan of sliced chicken breasts and sweet peppers covered in a flavorful marinade. Serve with some corn and flour tortillas, guacamole, pico de gallo, shredded cheese, and sour cream. These oven baked chicken fajitas are a family favorite!

OVEN BAKED CHICKEN FAJITAS

Pepper, onions, and marinated chicken cook in one single pan in the oven. Serve with corn tortillas and toppings of choice. If you or the kids don’t like corn tortillas, simply use flour tortillas or mine love just the pepper/chicken mixture with some cheese on top. 

This creamy beef nacho soup will become a family favorite! Tender beef in a flavorful nacho cheese broth. Only a few ingredients, a few minutes of prep, a slow cooker and you're done. Garnish with shredded cheese and crushed tortilla chips!

BEEFY NACHO SOUP

This cooks in the slow cooker so it can be ready when you are! It has some surprise (interesting?) ingredients but trust me, it works. Serve with crushed tortilla chips and cheese. 

Dinner can be ready in a hurry with Smithfield All Natural Boneless Pork Chops and chopped potatoes roasted in an easy garlic ranch seasoning mix. One sheet pan and about 30 minutes is all you need for a healthy, delicious weeknight meal that is also great for a weekend dinner with guests.

SHEET PAN GARLIC ROASTED POTATOES & PORK

Tender, flavorful pork is roasted with red potatoes for an easy, one pan clean up dinner. Even if you’re not a pork lover these just might change your mind (they changed my mind!).

Taco biscuit bake is an easy & simple one pot meal. Puffed up refrigerated biscuits smothered in a beefy taco mixture and topped with melted cheese. Customize with your favorite taco toppings and you have a delicious dinner that the entire family will love!

TACO BISCUIT BAKE

When you just want something that you know your kids will eat with no whining. This is it! Refrigerated biscuit dough tossed in a beefy taco mixture. Sprinkle with cheese and bake. I love to server this with taco toppings; shred lettuce, tomatoes, olives, sour cream, avocado slices, etc. Plus, it’s a 30 minute meal too.

I just took new pictures of these and updated the post this last week and already they have been pinned 10,000 times! These muffins are bakery style and they bake up so perfectly high and round. I just know you will love them.
