Hamburger Soup is an easy tomato based soup recipe with ground beef, seasonings, potatoes, and it uses frozen vegetables for ease and convenience. This soup is made in one pot with easy simple ingredients.

Hamburger Soup Recipe

We love this hamburger soup so much that it makes a regular appearance at our table. Even during the hot summer months! 

Simple to make, with only a little chopping needed, and it has the perfect hearty flavor that makes it the best kind of comfort food. Condensed tomato soup & worcestershire sauce are the “secret ingredients” in my hamburger soup that really provides the perfect hearty tomato flavor and thickness to the soup.

What You’ll Need

Simple and inexpensive ingredients are all you need to make hamburger soup.

  • Ground Beef – I use 93/7 lean ground beef. You drain the excess grease so you can really use any kind you like or what you have.
  • Onion – Use a yellow onion or a white onion for this recipe. 
  • Garlic – Fresh garlic cloves, chopped garlic from a jar, or garlic paste from a tube can all be used in this recipe. 
  • Salt & Pepper
  • Chopped Yukon Gold Potatoes – Peel the potatoes and then chop into really small pieces. Like less than 1/2-inch pieces. 
  • Beef Broth – I always use full-salt beef broth. You want that extra flavor in this soup. 
  • Condensed Tomato Soup – My “secret ingredient” that really makes it delicious.
  • Petite Diced Tomatoes
  • Frozen Mixed Vegetables – I buy a bag of frozen vegetables that has carrots, peas, corn, and green beans in it.
  • Worcestershire Sauce – Don’t leave this out! Really provides a lot of flavor with just a little bit.
  • Dried Parsley
  • Dried Basil

How To Make Hamburger Soup

You only need one pot to make this recipe!

Cook The Ground Beef : In the soup pot you are using, cook & crumble the ground beef, onion, garlic, and salt. When the ground beef is no longer pink you know it’s done. Drain the excess grease and liquid. 

Chop The Potatoes : While the ground beef is cooking, peel and chop the potatoes into really small pieces. 

Soup Ingredients : Add the chopped potatoes along with the remaining ingredients into the soup pot and stir.

Simmer Soup : Bring the soup to a boil. Once boiling, reduce heat to medium low, cover the pot with a lid, and simmer for at least 30 minutes. This soup tastes 100x better if you let it simmer for the 30 minutes.

Tips For Success

Here are a few tips to help you make this recipe.

  • Let It Simmer : This is so important! This soup tastes so much better after the 30 minute simmer time. Don’t try to shorten it or else the flavor of the soup will be impacted. 
  • Small Potato Chunks : Chop the potato into really small chunks, about 1/2-inch in size, so that they will soften in the 30 minute simmer time. If the potato chunks are larger, they will need to cook longer, so test the potatoes to see if they’re done. 
  • Check The Soup At The End For Taste : Taste the soup after the simmering time to see if it needs more salt & pepper. I usually end up adding a little bit of salt before serving. Especially if you use low-salt beef broth, check the taste, because you will probably have to add something until it’s where you want it. 
  • Use Full Salt Beef Broth : For best taste and flavor use the regular beef broth. As mentioned above, if you use the lower sodium beef broth then check the taste at the end of the simmer time and add additional salt as needed.

Variation Ideas

There are a few ways to change up this soup.

  • Add More Seasonings : We think it’s perfect as is but feel free to add additional seasonings if wanted. You can add Italian seasoning, garlic powder, onion powder, or even some chili powder or cayenne pepper for some spice. 
  • Use a Different Potato : I love the sweeter, buttery flavor of the Yukon gold potato but any potato can be used in this recipe. Red potatoes or Russet potatoes can all be used if wanted. 
  • Add Some Spice! : Use a can of diced tomatoes w/ green chilies or a can of Rotel diced tomatoes in place of the regular petite diced tomatoes. You can also add cayenne pepper or chili powder in with the other dried seasonings.

Serving Suggestions

I like to serve this soup with some bread on the side like these easy to make one hour rolls. You can make your favorite homemade bread or roll recipe, or buy some from the deli, or try some of the frozen bake n’ serve rolls from the freezer section of the grocery store. 

If you want to serve it with another side dish try serving it with some cut up fresh fruit that your family loves. 

How To Store Leftovers

Store leftovers in a covered container, like a Tupperware container, in the fridge for up to 4-5 days. 

Reheat leftovers in the microwave or warm it back up on the stove top. 

Can I Freeze Hamburger Soup?

Yes! This hamburger soup freezes perfectly. 

Put leftover soup in a freezer-safe gallon Ziploc bag, or freezer safe container, and freeze for up to 3 months. 

When ready to use the frozen soup, thaw leftover soup in the fridge overnight, or add the frozen soup into a soup pot over the stove and simmer until it’s ready. You may have to add additional broth or water when reheating the frozen soup.

Hamburger Soup is an easy tomato based soup recipe with ground beef, seasonings, potatoes, and it uses frozen vegetables for ease and convenience. This soup is made in one pot with easy simple ingredients.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely diced
  • 2 cloves garlic
  • 1 teaspoon salt
  • 2 cups peeled and chopped Yukon yellow potatoes chopped into small pieces (1/2-inch)
  • 2 cans (14.5 oz each) beef broth
  • 1 can (10 oz) condensed tomato soup
  • 1 can (15 oz) petite diced tomatoes do not drain
  • 1 bag (16 oz) frozen mixed vegetables
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil

Instructions

  • In a soup pot, over medium-high heat, brown the ground beef, onion, garlic, and salt until no longer pink. Break up meat in crumbles as it cooks.
    Drain the excess grease.
  • Add chopped potatoes, beef broth, tomato soup, diced tomatoes, frozen vegetables, Worcestershire sauce, and the seasonings. Stir to combine.
    Bring to a boil. Once boiling, cover with a lid and reduce hear to medium-low. Let simmer for at least 30 minutes for the flavors to combine and the soup to become thicker.
  • Before serving, taste the soup after the simmer time and add additional salt as needed. I usually end up adding a little more.
  • Leftovers can be frozen for up to 3 months or stored in the fridge, in an air-tight container, for up to 5 days.

Potatoes : Yukon yellow potatoes are the best to use and what I prefer. But you can also use red potatoes or russet potatoes as well. Be sure and cut them into really small pieces so they will soften in the 30 minute simmer time. 
Garlic : Use fresh garlic cloves that have been minced or pressed, use chopped garlic from a jar, or garlic paste from a tube. 
Beef Broth : Using the regular, full salt beef broth for the best flavor. If using lower sodium beef broth, be sure and taste the soup at the end of the simmering time and add additional salt as needed. 
Serving Size : This recipe makes 10 cups of soup. Feeds 8 servings of 1.25 cups each serving. 
Let It Simmer! : This soup has a completely different taste once it has simmered for 30 minutes. Don't skip this step because it won't taste the same with less simmering time.

    This was an amazing recipe, so I decided to do a double batch of it. When I did that, I did not use the diced tomatoes, and I noticed that towards the end the flavor was a tad weaker than I expected. So I added in a bit more salt and a few more shakes of Worcestershire along with a small bit of oregano and perfect. Not to mention, it gave me an excuse to break out my new dutch oven.

          Yes, I think so. I would brown the ground beef with the onion in the IP on the saute setting. Turn off saute setting and add all the other ingredients. I have never cooked it in the IP so I am just guessing on time, but I would say 10 minutes maybe? Do a quick release and serve. I think it would work fine!

  3. OMG! I love this soup. I love eating soup period. I also love okra in these kind of dishes so I got out the chopped frozen okra, rolled it in corn bread meal and added it to the soup as well. The acid in this tomato base of soup prevents the okra from becoming slimy. This is a 5 star soup.

      I make this often for my family of 5 and we love it! I’ve never liked tomato soup but I sure do eat this up with some corn bread! I omit the canned tomatoes and seems to be okay. I also always add a pinch or so of sugar…to offset the tomato-y flavor. So good, thanks for the instant pot comments as well. Will be trying that next!

      I did change recipe a tad due to what I had on hand and I worked by taste. I love the idea of adding okra. I didn’t use the tomatoe soup but more tomatoes and beef broth and a little browning sauce in place of worchestershire sauce. It was awesome and too thick to add any pasta which I often do in soup.. So glad because it kept it different and was delicious. I had tiny golden potatoes which I cut up but did not peel.

    Ok, Jessica, Ive been looking for this soup because my son says his girlfriends mother makes it and its his favorite. I’m counting on you. !! LOL. I grew up on a dairy farm and never heard of this soup. I did however have something close to it in Virginia at one of Thomas Jefferson pub hang outs were they serve classic revolutionary food. No pressure right. Let you know how it went.

      You could try using canned tomato sauce but it does not have the flavor or slight sweetness that tomato soup has. Maybe try a tomato sauce with the Italian herbs in it.

      I am gluten free and can’t have canned tomato soup. instead I used 4 Tbsp tomato paste and about 3/4 of a cup of water.
      I know your question was a few years ago but maybe this will help someone with the same question.

      Depending on how hot your slow cooker cooks, I would say 5-6 hours on low. It could stay on warm for awhile afterwards if needed. The meat is already cooked so it’s just blending the flavors and getting the veggies soft.

    I made this with a can of Italian stewed tomatoes and a can of tomato sauce. Also I pre-cooked fresh potatoes and carrots so they wouldn’t be under-cooked when the soup was done. Added a can of corn, but no frozen vegetables. Turned out great!!

        Yes you can. Just make sure the ground beef is cooked and then add everything together in the crock pot. Cook on low for 4-6 hours.

        1. This soup my boyfriend said was so yummy. I had to cook in the crock though for about 8 hrs because the carrots and the potatoes were not close to being done at at 4-6 hrs.

      This soup is super ! I’ve made it several times and my family loves it. I often add chopped cabbage , I love the flavor it adds…sometimes I also add extra black pepper also. .

    Thank you so much for this easy yet delicious recipe!! This recipe is perfection, i will absolutely be adding it to my cookbook! The only thing i had to do differently was finding a substitute for tomato soup, as i only had tomato sauce on hand. I googled a substitute and this one worked perfectly: 1 can tomato sauce, 1 TBSP brown sugar, 1 TBSP corn starch, 1/2 tsp salt. Next time i will have that tomato soup so its even easier ? The only thing i intentionally added was one bay leaf while simmering. Thank you again!

    Hi, delicious soup. I’ve been making this for over 40 years. The recipe was given to an aunt by her Doctor when she was diagnosed with Diabetes. The only difference is I use 28 oz. can of Italian Tomatoes in place of tomato soup and diced tomatoes. Also, doesn’t need beef broth. Very good and freezes beautifully. This is my weekly 30 minute meal.

    What a delicious soup! This is the best vegetable soup we have ever tasted. I used stew beef instead of hamburger and it turned out really great. I cut the potatoes into a little larger cubes so they stay a little firmer and they did cook completely. I cut the stew beef in bite-sized pieces and the meat cooked completely too.   27. Would it work to use frozen hash brown potatoes in place of chopping some up? (That way they’re uniformly sized AND I don’t have to actually chop them!)

      That’s a great idea. I think that would work. I would maybe thaw them for a bit before adding to the soup (so you don’t add too much water). Let me know how it goes cause that’s a big time saver.

    Five stars ! I do this in my instant pot. After sautéing the ground beef with onions and garlic, I drain it, then add back into the instant pot with all other ingredients. High pressure 17 mins. I do let it sit a few mins and then quick release pressure. It was marvelous !! I love adding frozen veggies. I use regular beef broth, regular tomato soup, and I do not find it needs any salt added.

    Yummy and Easy. What is the serving portion size ( 1 Cup? 2 Cups? ) I am trying to figure out how much you can eat for the 266 calories listed for 1 serving. I am not familiar with the kcal terminology for calories shown in the recipe.

      I would do LOW heat for maybe 4-5 hours. Just make sure the ground beef is cooked before adding it into the slow cooker.

    A nearly perfect soup. I have cooked this many times now. I use chicken broth instead of beef broth and I usually double the recipe because we can happily eat this soup for a meal or 2 for a few days. I eat it for breakfast sometimes.     My best friend’s mother made this soup all the time when I was growing up. The only difference is instead of using canned tomato soup she used to put in a bottle of ketchup. That would make it slightly sweeter then the tomato soup but it was delicious.

      I would cook the ground beef first and then cook everything on LOW for 5-7 hours depending on how hot your crock pot cooks at.

    Amazing!! We have made this about once a week to have in the fridge for lunches etc. I use Rotel fire roasted tomatos & season with Tony chaceres Cajun seasoning for just a tad of spice. Love love love!!!

      I make this soup but put all vegetables and can vegetables. I use potatoes, yams, turnips and brussel sprouts. I will use tomato soup or bravo sauce and spices. I also use lipton onion soup mix.

  48. I doubled the recipe. I was short one can of tomatoes and did not have the tomato soup. I instead used spicy V-8 juice. I then choose not to use the basil or the parsley. I did put in 3 stalks of celery. It turned out well.

    Very simple, delicious, and filling soup! The recipe as written makes a good amount, probably eight generous servings, so if you double it, you are going to have *a lot* of soup.

    I’m writing this in the midst of the Coronavirus pandemic, and grocery shopping is kind of hit or miss…this soup is very adaptable. You could use any ground meat – beef, turkey, sausage (or none at all and add some extra veggies or rice/pasta) – and it would still be excellent.

    I know all slow cookers are different, but that method didn’t work out with mine, after 7 hours the veggies and potatoes were still not tender. Next time I will just do it on the stovetop.

    Either way, this one is a keeper!

    Easy to make and delicious! Just the right blend of seasoning. I used turkey instead of ground beef, used very few white potatoes, and left out the salt and pepper, and instead of tomato soup I used tomato sauce with corn starch & brown sugar. I will add extra vegetables next time and serve over rice!

    This is the first recipe of yours that I’ve tried. Oh man, it has great flavor and surprisedly quite hearty! I followed it exactly– except the ground beef. I would definitely recommend the lean or turkey (as the recipe suggests) if you would rather not have the film floating on the top. I served it with garlic bread. We’re a family of four and everyone was super impressed 🙂 Thank you! I love this soup. It’s simple & fun to make– absolutely a keeper. I’m looking forward to trying more of your recipes.

      Yes I think that would be fine. Not sure how much it would change the flavor… but you could definitely just not add them. If it’s the tomato chunks he does not like maybe try using a seasoned tomato sauce, tomato puree, or crushed tomatoes.

    Very easy and tasty. I doubled the recipe and cooked in an Instant Pot. Followed the recipe exactly otherwise. I personally think the salt needs to be doubled. We topped with Cheddar Goldfish crackers. Even better as leftovers.

    Love this easy and delicious soup! Very forgiving, I add any leftover vegetables from fridge, box of broth instead of 2 cans (so a little more), whole onion, and pepper. My family loves soup and this one is a favorite. I needed to stretch it one night due to unexpected guests, added another can of chopped tomatoes, extra potatoes, and broth. Still so good.

    This recipe reminds me of a stew my grandmother would make every Saturday. The only difference is that my grandmother would use all the leftover food from the week and dump it into a stew pot, and let it simmer for half a day and it was always so good! Since there really was no actually recipe for the stew, after she passed away, my dad and I struggled to figure out on our own what made her stew so good. This recipe gave us a great base recipe and that’s when more memories came back and we remembered some of the variations, like instead of beef sometimes she would use shredded chicken and instead of potatoes she would use egg noodles, and chicken broth. She always used a variety of veggies, those changed weekly, again, depending on what veggies they had eaten during the week. My daughter absolutely LOVES this stew. She asks for it all the time, even in the middle of the summer, when it’s 100 degrees outside, LOL. I cook mine on the stove and once it has simmered for 30 minutes, especially if I prepare it in the morning and won’t be home most of the day, I transfer it to my crockpot and keep it on either low or keep warm and the flavors are just perfect!

    The small central school I attended in the 60’s and 70’s had a crew of “lunch ladies” that made all the school lunches. One of my favorites was their hamburger soup. This recipe is the exact replica of that soup!
