Company Green Salad

Crisp, bright greens with crunchy rice noodles, sweet red & yellow peppers, sugared almonds, salty sunflower kernels, and green onions. Topped with a simple dressing. This salad is surprisingly super easy and the perfect blend of texture, color, and flavor. I am sure I have said it before, but I LOVE COSTCO! I'm actually going there today :) Oh, and my husband worked there all through our college years! So we have good memories there and I will probably shop there until the day I die! Lemon Zucchini Bread

Sweet, lemony, soft, moist, light, and filled with zucchini! This bread is a yummy summertime treat with the lemon zest and a perfect way to use up some zucchini. This bread won't last long once it's made.    I am all about cooking & baking food during their specific seasons. Like..... Zucchini in the summer. Apples & Pumpkin in the fall. Strawberries in the Spring. Peppermint and gingerbread in the winter. Eggnog at Christmas. Turkey at Thanksgiving. You get the idea. I know I could make zucchini bread any day I want, or I could cook a turkey for dinner at … [Read more...]

Them. All!! Normally we have leftovers from dinner the night before and my husband will take it to work for lunch. Ummm, not this time :) These potatoes are so insanely delicious. It only takes a few minutes of chopping some potatoes, mixing up a delicious cream sauce to pour over them, and then you … [Read more...]

Menu Plan Friday

Hello! I know I'm late with this menu plan...... I feel so 'out of control' lately. Like, you know when there is so much to do you just feel helpless, like no matter what you do, it will not all get done (or in my case, it will all be late getting done :) ). Anyways, I'm here and I am determined to not let a blog post be one of those things I miss. Because I really, truly, and genuinely appreciate you readers and I love my little page of blog world. Just an fyi, I will be on vacation next week. So the posts will probably be fewer. It is my husband's and I first solo … [Read more...]
