Easy Taco Soup

Learn how to make Easy Taco Soup at home with this simple recipe! Ground beef simmers with convenient canned items like chili beans, corn, tomatoes, beef broth, and a packet of taco seasoning. This taco soup recipe is so hearty and flavorful, and is best served with shredded cheese, sour cream, and tortilla chips.

Ingredients

  • 1 lb ground beef
  • 1 yellow onion finely diced
  • 1 can (14.75 oz) reduced-sodium beef broth
  • 3 cans (15 oz each) chili beans do not drain
  • 1 can (15 oz) petite diced tomatoes do not drain
  • 1 can (15 oz) corn do not drain
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning

Instructions

  • In a soup pot, over medium high heat, cook and crumble the ground beef with the chopped onion until meat is no longer pink. Drain or soak up any excess grease from the meat.
    * Doing it this way means only using one dish. If wanted, you can cook the ground beef + onion in a skillet pan and then add it into the soup pot and add the other ingredients.
  • Add the remaining ingredients into the soup pot and bring to a boil.
    Once boiling, reduce heat to medium low, and let it simmer for 20-25 minutes. This helps the soup thicken and the flavors come together.
    * Do not cover with a lid during the simmer time.
  • Serve with your favorite toppings (shredded cheese, sour cream, chopped cilantro, tortilla chips or Fritos, etc.)

Chili Beans : These are pinto beans in a mild chili sauce. They are specifically labeled as 'chili beans' on the can. Be sure to dump the entire contents of the can into the soup. No need to drain it, as we want that flavor from the chili sauce. 
Make It Spicy! : Use a can of hot or medium chili beans, add a can of diced green chilies into the soup, use a packet of hot taco seasoning, add chili powder or cayenne red pepper, use shredded Pepper Jack cheese for the topping or sliced jalapeños. Lots of options to make it spicy!
Tip : When I make this recipe I use a packet of mild taco seasoning. I also use shredded cheddar cheese or Colby Jack cheese.
