I’ve been making these skillet sweet carrots for years. When I can find a vegetable and a way of cooking it that even my kids will devour with no complaints, I hold onto that recipe!

The entire family will love these carrots. They are slightly sweet, soft & tender, and then topped with some melted butter at the end which just makes them crazy good. My favorite part is that they only take 15 minutes to make and all of that time, except for maybe 1 minute, is the carrots just cooking in the skillet pan.

All you need is one skillet pan, some chicken broth, salt & sugar, baby carrots, and butter. It really is so easy. You can add as much or as little butter as you want. The original recipe calls for 1 tablespoon but I found that to be too much….. I know, I know, you can never have too much butter 🙂 But, I prefer these with slightly less. 

Garnish with chopped parsley for an extra flavor boost. I only add it if I already have some in the fridge. No need to buy parsley specifically for these carrots because they are so good with it or without.

Ingredients

  • 1 bag (16 oz) baby carrots
  • 1 cup chicken broth
  • 1 tablespoon sugar
  • 1/2 -1 tablespoon butter
  • Salt and Pepper to taste

Instructions

  • Add chicken broth and sugar in a saucepan or skillet pan, and bring to a boil. Once boiling add the baby carrots and cook until soft, about 15 minutes. By the end of cook time most of the broth will have evaporated, that's fine, that is usually how I know they're done.
  • Drain and add butter, salt & pepper (if wanted). Stir to coat.
  • Serve!
