Tender cooked fresh green beans right in your slow cooker. Only a few ingredients and you have a healthy & delicious tasting side dish.
I made these for dinner and I was fully expecting a battle from the kids. Surprisingly, like I was in total shock, my kids ate these green beans like they were candy. My rule with dinnertime is that they have to eat everything. I give them small amounts of everything I make and they have to eat it. I don’t make a separate meal for the kids and then something different for my husband and I. Too much work! So, I was pleasantly surprised when these green vegetables were not a fight π
They cook in the crock pot and come out so tender and flavorful. I am always looking for new ways to incorporate more vegetables at dinner, and these are definitely going to be making lots of appearances at ours.
When working with fresh green beans, you want to wash and rinse them first and then you cut a little bit off of both ends . The other thing you want to make sure and do is to peel the string off of it. If you don’t peel all the strings before you cook them, don’t worry, they peel off just fine (and the string is easier to see) when they are cooked and warm.
Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion, diced finely
- 2 garlic cloves, minced or pressed
- 1 lb fresh green beans [ends cut and string removed]
- 1 can (14.5 oz) chicken broth
- 1/2 teaspoon kosher salt
Instructions
- Spray the inside of your crock pot with cooking spray.
- Over medium heat, saute onion and garlic until tender [4-5 minutes]. Add into the crock pot.
- Add the green beans, chicken broth, and kosher salt. Stir together.
- Cook on low heat for 4-5 hours [mine took a little less than 4].
- Remove beans, with a slotted spoon [to drain the liquid], onto a serving plate.
