7 CAN SOUP

I am sure you have seen some version of this ‘7 or 8 can soup’ floating around Pinterest. I’ve made it more times than I can count but never posted it on the blog because… it uses canned chicken!

I have never even used canned chicken before this 7 can soup recipe appeared in my life. I am telling you, that it’s so good and easy that I specifically keep canned chicken on hand just for this recipe. 

If you have any issues with canned products well then come back tomorrow because today is all about the cans!

INGREDIENTS NEEDED FOR 7 CAN TACO SOUP

Chicken Broth – This recipe calls for one can of low-sodium chicken broth and I highly recommend using the low-sodium broth. I have made it a few times with regular chicken broth and we all find it to be way to salty.

Green Chile Enchilada Sauce – You will find this in the Mexican food aisle by the beans and salsa. I always use ‘mild’ so my kids will eat it, but feel free to use a ‘medium’ or ‘hot’ enchilada sauce. I’ve had some readers use red enchilada sauce with success but we definitely prefer the green chile enchilada sauce. 

Canned Chicken – This may be a questionable ingredient to most but trust me, no one will tell the difference, and it makes this soup a ‘7 can’ soup and it makes this soup so easy to make. And quick too! I will only buy the Costco brand of canned chicken because it really is the best. Buy whatever kind you want just make sure it’s the same size as called for in the recipe. 

Canned Beans – Use whatever kind of beans you prefer. I love the pinot and black beans together in this soup, but use 2 cans of the same bean or substitute with whatever type of beans you want. 

Petite Diced Tomatoes – These are just canned diced tomatoes that are cut small which makes them perfect for this soup. Use regular diced tomatoes if you can’t find the petite diced tomatoes. 

Canned Corn 

Taco Seasoning Packet – I always use the mild version of taco seasoning. Again, you can use homemade taco seasoning if you want. 1 packet of taco seasoning is about 2-3 tablespoons of homemade seasoning.

MY QUICK TIPS FOR THIS RECIPE

  • If you really don’t want to use canned chicken then substitute with 2 cups of shredded or chopped cooked chicken. At least try it once with the canned chicken and I am betting you’ll love it!
  • To increase the spice factor in this soup use hot enchilada sauce or you can even throw in a can of diced green chilies. 
  • The recipe as is, is not spicy at all. I always mix my kids’ soup with some sour cream which helps make the spice non existent. 
  • Our favorite toppings are sour cream, shredded cheese, and tortilla chips! We love to dip the chips into the soup. Yum.

Ingredients
  

  • 1 can black beans (drained & rinsed)
  • 1 can pinto beans (drained & rinsed)
  • 1 can petite diced tomatoes (undrained)
  • 1 can sweet corn (drained)
  • 1 can (12.5 oz) chicken breast (drained & flaked)
  • 1 can (10 oz) green enchilada sauce
  • 1 can (14 oz) low-sodium chicken broth
  • 1 packet taco seasoning
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder

Instructions

  • Combine all ingredients into a large soup pot and bring to a boil over medium-high heat. Once boiling reduce heat to low and let simmer for at least 15 minutes. Stirring occasionally.
  • Serve with tortilla chips, shredded cheese, sour cream, and avocado!

Use 1 1/2 cups of your own shredded chicken if that is what you prefer.
I use a packet of mild taco seasoning.

        I don’t have green enchilada sauce, but have mild red enchilada sauce so I’ll use this instead. My husband isn’t a fan of tomatoes so I’ll omit those and no canned broth, but have a chicken bouillon cube and dilute so it’s not so salty as mentioned. Super excited to try this!

        You could just try leaving it out as I am not sure what you could replace with it. You’d be missing out on that flavor so maybe use a can of diced green chilies instead. Just an idea 🙂

            Red sauce would work just fine. I’ve never used it cause we prefer the green. The red sauce can sometimes be spicy, depending on the brand you buy, so that’s the main reason I don’t use it.

            I always use red enchilada sauce. My grocery store only carries the red kind. It is delicious and not too spicy. I’m not a big fan of spicy food. It’s the only change I make to this recipe besides shredded my own chicken breast. It is always a hit!

  6. I can’t wait to try this recipe. What do you suggest serving with as a side? I know it’s kind of a complete meal in a pot but I’d love to have at least one other food on the table with it.

      Hi Amanda! I either serve this with cornbread (we all love cornbread in my family) or some fruit. My kids really like kiwi and pineapple or I’ll use whatever fruit I have. For the most part, I always serve it with cornbread because it’s something we all love.         Spanish rice is really easy to make also. Cook the rice an oil tell Browns add to can of tomato soup diced to chopped onions. Garlic salt and salt till Rye starts cooking bring to a boil. Reduce heat and simmer until rice is tender delicious

          Ellie I actually put a pkg of the Knorr’s Spanish rice IN this recipe! I use a whole box of chicken broth though so there’s plenty of broth for the rice to soak up as it cooks. It almost makes it more of a “gumbo” bc there- less liquid (especially the next day) but my family LOVES it this way

  8. My family loves this recipe, I’ve been making it twice a week. I use precooked chicken breasts. I tweaked it the first time I made it because I didn’t have enchilada sauce when I thought I did. I used a jar of mild salsa verda instead, and it was so amazing that we keep doing it that way.

      Yes that would be fine. I prefer the green because I don’t think it’s as spicy. Plus, the red may give the soup a really dark color but taste wise it would work just fine.

  14. This is a very good recipe my kids love it. One thing I do is I slightly over spice it with red pepper flakes. Then add sour cream to bring the heat back down makes it wonerfuly creamy. Thanks again for the recipe

  17. I made this soup last night with a few minor adjustments. First a made my own taco seasoning which I found on line very easily, and took about 2 minutes to throw together and if you want to do this you would use two tablespoons. Next I bought two cans of diced jalapeños. With these I actually added them to the canned chicken. I put some olive oil in a pan put the can jalapeños in the pan and sauteed the canned chicken, as I’m not really a fan of canned chicken and I got it on sale. This is where I added the cumin, chilli powder, and garlic powder. In with the chicken and jalapeños. The rest of the recipe I did pretty much the same I did use low sodium tomatos, black beans, and pinto beans. As well as spick green enchilada sauce. Put it all together add my 2 tablespoons of taco seasoning and let it cook for the time needed.
    Taco seasoning recipe

    1tbl chili powder
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1/4 tsp oregano
    1/4 tsp crushed red pepper flakes
    1/2 tsp paprika
    1 1/2 tsp cumin
    1tsp black pepper or Cayenne please be careful with the heat of the cayenne pepper if you chose to use that.
    1tsp sea salt (optional) I didn’t use the salt.

  19. Very good and easy! I was gifted some canned chicken and was delighted to find you liked it in this recipe and I agree. I used salt-free taco seasoning mix, chopped fresh tomatoes and added some peppers and onions. I rinsed the beans and forgot to drain and rinse the corn, but it did not effect the dish, except adding more sodium than I wanted.

  21. I used this but let it boil down a little more until it was really thick and used it as a layer dip for tortilla chips. So one layer of “soup” then one layer of cheese then one layer of sour cream and then start over! We’ve tried it lots of ways but this way is my personal favorite.

  22. Could I replace one of the cans of beans with hominy? I’m worried it may be a little bean heavy for my liking, but I’m unsure if hominy would work.

      If you’re worried about too many beans you could always just not add one of them. I’ve never had hominy so I can’t say for sure. I think hominy has something to do with corn, right? You could always try it and see, or just not add one of the cans of beans. The soup may be slightly thinner. Or, if you like corn you could also add 2 cans of corn? That’s always an option too. Good luck!

  23. My family loved this soup, and I loved that it was fast and easy to make on a busy weeknight. I used frozen corn and fresh chicken breast just because I had them on hand. Added cilantro and green onions to the melted cheese and sour cream and topped it all with the avocado slices. I also doubled it for my family of five and had some leftovers the following night. It was a very hearty meal. I predict this will become a family favorite.

      It would not need long. Maybe 2-3 hours. Or it might possibly work just by keeping it on the warm setting all day.

  28. I enjoyed this recipe because it was so quick! Reminded me of chicken tortilla soup which is a favorite of mine. I found it to be a bit salty so I would probably use low sodium beans, broth, etc. next time.

    I just made this and love it! Super easy and I like that you can add whatever toppings so it keeps the base soup very healthy (mine came out to 208 calories and yielded 8 1-cup servings). I used low sodium black beans and broth And thought the seasoning was perfect but you could use all low sodium if you’re watching your salt and then salt to taste.

    I can’t wait to try this as I LOVE soups and stews and can live on them. I think I will add fresh cilantro and throw in a can of roasted green chilies (love them!). Have you tried the fire roasted tomatoes? I bet they are great in this dish. Happy eating!

      The fire roasted tomatoes have so much flavor and would be great in this soup. I just prefer the small diced pieces of the petite tomatoes so that’s what I always use.

  38. We loved it. Juice left over was so good, I’m going to cook some red beans in it. Was going to rehash the leftovers, but all that was left was mostly the liquid. Putting in dry red beans and another can of diced tomatos and green enchilada sauce. Should be yummy too.

    Im actually making it right now. The only substitute I did was ground turkey instead of chicken because I don’t eat canned chicken and also because I didn’t get to thaw any chicken out. It smells great. I can’t wait to eat it.

    I couldn’t find a can of organic green enchilada sauce so I replaced it with a can of organic red. It makes up for the fact that I don’t put a pack of taco seasoning in it due to it possibly having soybean oil. I also cooked the chicken in the crockpot. Absolutely delicious and easy meal.     Sorry I can’t find it anywhere but how do you adjust this to make it in instant pot? I just got an instant pot so I’m not good at figuring out how to adapt things yet.

      I am not good at that either 🙂 This recipe literally takes about 10 minutes on the stove top. I think it would take longer in the instant pot because it has to come to pressure and all that. If you do use the IP, I would only cook it for like 1 or 2 minutes. But again, I have never tried it so I am just guessing.

    Wow, made this today and it was delicious. Doubled the chicken and halfed the chili powder. Could not find green enchilada
    so I used salsa verde. Can easily be spiced up for those that like that. Used sour cream to mellow. Frankie’s is always in the refrig.

    This recipe is delicious! Was searching for a recipe to use up some canned chicken that even our dogs did not like. Found this soup and had most of the ingredients. Did not have the green Enchilada sauce, but had Frontera’s red sauce in a pouch. Used this plus a 4 oz can of green chilies. Added a jalapeno and green onions because I always have to add something. Cannot believe how good this soup is. I would serve this to guests anytime. Maybe I’ll add corn bread! Probably will never buy canned chicken again, but will definitely make this with my own chicken. Thanks for a wonderfully easy and delicious soup!

      Ashley, you asked “Has anyone ever omitted the tomatoes?” “Anyone ever” is very broad and nearly impossible to answer. Presumably someone has, but whether that person happens to be on this site reading the comments is questionable.

      If you skip them, you will have a thicker bean-er soup. Perhaps add some liquid – more broth or water, for example.

    Have you tried it with Rotel instead of taco seasoning? I just made it according to the directions other than not using a full packet of taco seasoning and using two cans of chicken. We liked it…….. but next time I am going to change it up with Rotel. I like what Rotel does for my chili and I am thinking we might like it better than with the taco seasoning. Of course, then it would not be taco soup. Lol

      I would just add the rotel along with the taco seasoning. It will give it more spice and flavor. Enjoy! I don’t use rotel just because it’s spicy for my kids.

    THANK YOU SO MUCH FOR THIS RECIPE!

    I absolutely LOVE this soup! I only just saw it on imgur a few weeks ago, but I’ve made it several times since. I’m even making it again this weekend to ‘show off’ when my parents come visit, ha! It’s genuinely one of my favorite meals now! And I cannot believe how easy it is!! <3 Pretty sure it'll be my mom's favorite after this weekend, too; this is right up her alley AND quick to make! Uggghhh and it makes the whole house smell wonderful!

    We can't keep these leftovers in the house, because it's so good we keep sneaking down to the fridge for spoonfuls or bowls, even cold! I've doubled it for lots of guests, spiced it up with spicier enchilada sauce and/or jalapenos, cooled it off for kids, and had it exactly as listed – and I get compliments and empty bowls every time. Let it simmer a bit longer for a thicker soup, or add rice, or thicken more and throw it in tortillas, or… I'm gonna stop; the possibilities are endless!

    Anyone antsy at all about using the canned chicken… TRY IT! I wasn't at all sold on it, but I tried to just follow the recipe, and I LOVE it. It's sooo easy, and it tastes amazing! I put the broth, sauce, and tomatos in first, then the chicken, amd maybe let them simmer together for a couple minutes if I have time, and it's mouth-watering every single time. I admit I haven't tried it with leftover whole chicken or rotisserie or anything yet, but I don't even feel the need to.

    (PS – I'm not even sorry 99% of my sentences end with at least one exclamation point! That's how genuinely happy I am about this recipe! SO HA!!!!)

    7 can taco soup was delicious & soooooo easy!! Followed recipe except my husband prefers beef so substituted 1 lb.. ground beef, added a 4oz can green chilies & onion powder. Next time will try red enchilada sauce as that is my preference.

    I made this recipe last night. It is divinely delicious! I used all unsalted beans, broth, tomatoes and veggies thinking I could always add salt later. Didn’t have any green enchilada sauce, so used a small can of Herdez salsa instead. I ended up adding a little more stock at the end. Actually forgot to add cheese at the end, but put a teaspoon of sour cream on top & tortilla chips. The salt from the chips was enough for me. Absolutely love it and there are so many ways you can add & subtract ingredients from what is available in your pantry.

    I’ve made this several times and my husband and I really like it. The only changes I make are that I use about a half-pound of lean ground beef and beef broth instead of chicken and chicken broth and I only use a couple of teaspoons of the taco seasoning mix instead of the entire packet. I’ve used ranch style beans when I didn’t have pinto beans and I think I might like that even better. It’s one of the few soups that is hearty enough that I don’t mind not having crackers or cornbread with it. Thanks for sharing such a great recipe!

    Great soup recipe. I didn’t have green enchilada sauce so I used a jar of salsa verde instead. I also crumpled a few touch of lime tortilla chips and it went really well with the soup. I also used rotisserie chicken instead of canned chicken. This was a hit with my entire family!

As far as alternatives you could just leave the beans out completely, add another can of corn (they have a fiesta canned corn with corn + peppers that would be yummy in this soup), or maybe add another variety of diced tomatoes. Just some ideas. Hope they help 🙂

    Oh my… I just have one word for this soup, DELICIOUS! It’s so easy to put together, I love it! I made a batch of this to have for lunch all week last week. I was looking for something healthy (low in WW points) and something incredibly simple because I just didn’t have a lot of prep time last week. This was PERFECT! I used 99% fat-free ground turkey breast in place of the canned chicken. I just browned it up in a little olive oil before adding the rest of the ingredients. It’s so healthy, so filling, and so full of flavor. I can’t say enough good things about your recipe. It’s just so yummy! Thank you so much for this recipe! If anyone else reading this is a WW like me and is curious, it’s 1 point on the blue and purple plans and 7 on the green plan. I did not include any optional toppings in that calculation.     The whole family, even the toddler, loved it! Changed out the green sauce for a mild enchilada sauce and left out the extra chili powder since there was some in the red sauce and it was yummy. We put Mexican cheese and crushed tortilla chips on to.

    I was trying to find low KCal recipes for my husband, who’s trying to lose weight and who has zero tolerance or capacity for counting calories, or carbs, etc. This was a fantastic recipe, and easy as hell. Even with my modifications–I cooked 3 small chix breasts and used those; made my own pintos (didn’t have a can) and took the diced tomates and ran them through the blender (spouse doesn’t like bits o’tomato floating around in stuff). Even with those mods, it was terrific. If I’d known how much he (and I) were going to like it, I’d have doubled it and frozen half. Highly recommend and perfect for dieters. Next time, I might go the dump route with all canned ingredients, but this seems to be a pretty fungible and forgiving recipe. Well done.

    My husband loved this and I loved the ease, even though I a) cooked chicken for it, b) cooked Pintos for it and c) had to puree/blend the diced tomatoes for it, as Himself doesn’t care for chunks of tomato in his food. (Don’t ask). BUT, it was still easy, he loved it and all the “cans” are on my next shopping list, esp. as he’s trying to lose weight–and this is seriously diet-friendly stuff.

    Question–have any of you ladies done anything like sneaking in riced cauliflower, maybe from frozen, or the like? Or Zoodles? Anything like that? I’m on a quest to find food he’ll love (or at least like…sigh) that is healthier and filling. Anybody? I was thinking that the riced (from frozen) cooked cauliflower couldn’t change the flavor much…

  94. Making for a church supper tonight. I use Sam’s Members Mark Chicken which is great, too. I usually dislike canned chicken. I had a thought, but I’ll not use tonight. It would be a great way to clean out those partially used salsa’s in the fridge, but maybe I’m the only one with a half dozen different jars with a small bit in them (1/3 to a good tablespoon).

    WOW!!! I finally made this after saving it a few months ago, and I had made a note that Ellie mentioned that her family enjoys adding the Knorr Spanish Rice mix in it, so I did that because I thought it sounded awesome! This is FANTASTIC!!! I was trying to use cans of various things that I have on hand, so I DID have to use red kidney beans instead of pinto beans, I did 2 of the 12.5 oz cans of chicken after reading that you had recommended 3 cups of shredded rotisserie chicken to someone else…that one can was nothing compared to 3 cups of shredded chicken, plus the chicken is so soft it just falls apart. I used 4 cups of chicken broth like Ellie recommended. Oh, and I did 3 rounded Tablespoons of Ortega taco seasoning since I had added so much extra liquid, BUT, I really think that the seasonings that are in that Knorr Spanish Rice mix added something unique! This was just so yummy…my husband just came back for thirds!!! LOL Thank you for sharing this super easy recipe <3

I had to substitute the beans for Ranch Style but it still turned out good! Next time I’ll have the ingredients in my pantry because I’m sure it’s even better with the right beans.
