AVOCADO DIP

This avocado dip recipe is the perfect party dip, game day dip, or really anytime! If you love avocados (and lots of them!) then you will love this avocado dip.

It has 6 whole avocados, black beans, corn, red onion, and then it’s covered in salsa verde. 5 ingredients is all you need for the best dip recipe.

DOES AVOCADO DIP TURN BROWN?

-Yes, it will eventually turn brown just like anything with avocado does. But, the good news is that the salsa verde helps prevent this avocado dip from turning brown right away!

-Avocado Dip will last in the fridge, covered with saran wrap, for 1-2 days. I love this dip cold so I always make it a few hours before I need it and then let it refrigerate until I am ready for it. 

-I would not make this dip a day ahead of time. While it won’t necessarily brown, it is much tastier when it’s freshly made, or within 2-4 hours of making it. 

-With that said, I am not one to turn down day 2 leftovers of this avocado dip 🙂 Even if it is beginning to brown.

HOW DO YOU MAKE AVOCADO DIP?

  • Avocados – This recipe calls for 6 avocados and sometimes it can be hard to find 6 ripe avocados at the same time! I have found good luck when I buy the bag of 6 avocados from Costco. They usually all ripen at the same time which makes it easy to make this dip recipe. 
  • Black Beans – Make sure to drain the beans well! If you don’t like black beans then use something else like pinto beans. Or leave the beans out completely. 
  • Corn – Use any canned corn you like. There is fire-roasted corn, yellow & white corn, white corn, or just regular canned yellow corn. Or again, just like the beans, leave out the corn if that’s what you prefer. 
  • Red Onion – I have found red onion to be the best in this dip as it provides tons of flavor. Yes you can substitute with another onion like white or yellow, or even a sweet onion. 
  • Salsa Verde – Recipe calls for 1 cup of salsa verde but use more or less depending on what ingredients you left out and depending on how soft your avocado is. Start with 1/2 cup and go from there.

HOW DO YOU SERVE AVOCADO DIP?

  • Tortilla Chips
  • A spoon 🙂 
  • Serve over grilled chicken
  • Use as a topping for these turkey taco burrito bowls 
  • Add to your salad
  • Taco topping
  • Nachos
  • Super Bowl Party
  • As an appetizer – I like to use the tortilla scoops chips and then place a small amount of avocado dip inside each scoop chip. A fun appetizer idea!
  • Serve with vegetable dippers – bell pepper strips or cucumber slices are good

Avocado Dip is packed full with chunky avocados, corn, black beans, red onion, and salsa verde. So easy to make you only need 5 ingredients.  

Ingredients
  

  • 6 avocados (peeled, pit removed, and chunked small)
  • 1 can (15 oz) corn (drained well)
  • 1 can (15 oz) black beans (drained & rinsed)
  • 1/4 cup finely chopped red onion
  • 1 cup salsa verde

Instructions

  • Combine all ingredients into a mixing bowl and gently stir together.
  • Serve right away or let chill in the fridge for 1-3 hours.

Notes

NOTE : Depending on how soft your avocado is and what ingredients you omit (corn or beans) you may need less salsa verde. Start with 1/2 cup and go from there. I can only find the salsa verde in a 7 oz can (which is just short of 1 cup, I use that can). 
 
This dip will last 1-2 days in the fridge before it will start turning brown. I would not make it the day before, but rather a few hours before you need it if you want to make it ahead of time. 
 
Feel free to add chopped cilantro and/or chopped jalapenos for more spice and flavor!

  1. I am not a fan of salsa verde, to put it nicely, any suggestions of what to use in lieu of it?? It looks AMAZING! ?

      Hi Jennine! It really is so good. You could try using a salsa you like in place of the salsa verde. Not sure how it would taste or turn out because I have only ever made it with the salsa verde. If it helps at all, the salsa verde is not spicy at all in this recipe. The creamy avocado balances it out really nicely. If it’s spice you’re worried about then you could always leave out the red onion. Hopefully that helps and let me know if you use another salsa! I’d love to know how it turns out.

  2. How about green onions? Has anyone experimented with this… I have green onions on hand but not red ones, was just wondering what the ratio would be or how many green onions to add. Thanks!!

      I think green onions would be a great substitution! I’ve never used the in this avocado dip but I see no reason why it wouldn’t work. You would still get that onion flavor from them.

      Hi Jackie. I have only used the Herdez brand of salsa verde. It’s the only one I can ever find at my grocery store. I hope that helps you and that you can find it at your store 🙂

    Won’t the avocados turn brown in this dip?

      They actually don’t! I was surprised when I first made it cause I thought for sure it would turn brown. If you left it in the fridge for days and days then yes eventually it would turn brown. The salsa verde has nice acidity to it which keeps the avocados green. If you’re worried you could always add some fresh lime juice as that will also help hold the color of the avocados. I hope that helps 🙂

      Yes! That is exactly what I use. The jarred salsa verde. Mine actually comes in a small can but it’s the same thing. I have also bought it in a jar (like a salsa jar) before. It just depends on what store I am shopping at. I hope you love this. Whenever I go to Sam’s Club I buy the bulk bag of avocados just so I can make this dip 🙂

  9. Yum! This looks amazing! I’m planning on making this dip for a work pot luck on Friday – I’m curious about how many people will this recipe serve? Trying to figure out if I need to double it (my office has about 10 people)

      It is so good! This makes quite a bit of dip and I am sure it would be plenty for 10 people. I am assuming with it being a potluck that there will be other food, so this recipe will plenty for the 10 people. I hope you all love it and enjoy your potluck! I love potlucks 🙂

      I’ll add that the most recent time I made this, I made it for my entire family (siblings, cousins, nieces, nephews, parents, grandparents, etc.) and it was plenty for all of us. There were lots of people and it was a potluck situation as well.

  10. I made this today for a party. Absolutely delicious. Didn’t look as pretty as the picture here. Maybe it was because my avacados were too ripe or the fact that I didn’t rinse the black beans (seems weird to me), but the taste was absolutely amazing. I also added more red onions. Soooooooooooo good. Thanks for the recipe.

  12. Can this be made one day before and refridgerated or does it turn brown overnight?

      It actually won’t brown like a regular avocado will. The salsa verde sauce slows down the browning process. But, I probably would advise making it the night before. I would say you could let it sit in the fridge for a few hours before serving. For the best and freshest taste that’s what I would do. Eventually it will brown, but it does stay good for about 2 days.

    Having friends over for dinner this evening so I made this to snack on before hand. I made only helf the recipe as there will be only 4 of us. I added a little Italian parsely and minced garlic. My daughter stopped as I was finishing it up. She said I should have made a full batch so she could take some with her. She requested I make it again and give her some. I think this will be a new favorite in our family! ?

    Making this for our 4th of July party because it looks and sounds terrific but I was wondering if I can substitute pinto beans or any other beans for the black beans I’m not a huge fan of black beans ant suggestions would be helpful.

    One of our Dance Dads made this for an event and it was amazing!! People who normally do not eat avocados are now loving this!! One of my friends asked me for the recipe and I told him with a few little changes adding jalapeños he won money to benefit the blind school here in our town!!!!
