I recently realized that I have been eating tacos wrong my entire life. I have always just served them straight out of the package. It was only when I tried a recipe for baked tacos that I realized how much better corn taco shells are when they are baked in the oven.

They’re crispy, the toasted corn flavor comes through and the edges get a bit of golden brown color to them. So. Good!!

Plus my kids prefer baked tacos so I have no problem finding new recipes to try. I have a few more to share on the blog because in all honesty I have kind of been obsessed with all things baked tacos.

I mean there are so many different ways to make a baked taco! Some sort of meaty filling with seasonings, topped with cheese and then baked to crispy corn taco perfection.

This beef fajita filling could not be easier. Chop up some bell peppers, an onion, 2 garlic cloves and cook those until they are nice and soft. Add some ground beef and fajita seasoning and cook through.

I have made these with my own homemade seasoning and it’s really good. If you’re in a time pinch or don’t want to make your own a store bought packet of fajita seasoning will do just fine πŸ™‚

Here is a good recipe that I use for homemade fajita seasoning. The recipe calls for sea salt but you can use any type. I always use fine kosher salt. I also use smoked paprika in place of the paprika. Smoked paprika hasΒ aΒ rich smokey flavor which goes greatΒ in fajitas. I also like to add some cornstarch to the seasoning mix too. Helps to thicken the meat mixture.

Cook those colorful bell peppers until they’re tender. It should only take about 5 minutes.

You can use any combination of bell pepper you want. Red, yellow, green, or orange. Or, get a bag of the small mini peppers and use some of all of them. Two bell peppersΒ are equal to about 1 1/2 cups diced.

Add the ground beef and cook through. Making sure to crumble the meat as it cooks. Once cooked you drain the meat, if necessary, and then add the fajita seasoning and some water. Let that cook for a few minutes and that’s it!

Fill those corn taco shells up with some beef fajita meat mixture, top with a generous helping of shredded cheese and bake those delicious beauties in the oven.

When they are done baking top with your favorite taco toppings. Shredded lettuce, tomato, pico de gallo, avocado, green onions, guacamole, jalapeΓ±o, sour cream…… anything you love!

Ingredients

  • 2 teaspoons olive oil
  • 2 bell peppers, diced small
  • 1 small onion, finely diced
  • 2 garlic cloves, minced or pressed
  • 1 lb ground beef
  • 1 packet (1 oz) fajita seasoning, or 2 tablespoons homemade
  • 1/4 cup water
  • 2 cups shredded cheese
  • 12 corn taco shells
  • taco toppings of your choice

Instructions

  • Heat oven to 375 degrees.
  • Heat olive oil in a skillet pan over medium high heat. Add chopped peppers, onion, and garlic. Cook for about 5 minutes or until tender, stirring occasionally.
  • Add ground beef and cook until no longer pink. Once cooked, drain grease. Add in the water and fajita seasoning. Stir together and let cook for about 2-3 minutes so the flavors can combine.
  • Place 12 corn taco shells into a 9x13 baking dish.
  • Divide the beef fajita mixture among the taco shells and then sprinkle cheese in each taco shell.
  • Bake for 15 minutes.
  • Fill with your favorite taco toppings and enjoy!

Notes

You can use any bell pepper you want. I used an orange and red because that is all the store had. Use any combination you want; red, green, orange, or yellow.

If you want to make you own fajita seasoning then use about 2-3 tablespoons (link in post for homemade fajita seasoning).

If you prefer your bell peppers with a bit of crunch then skip the olive oil step and just add the pepper, onion, garlic, and beef all together in the skillet pan and cook until the meat is no longer pink.
