I have to admit that I love a good casserole. I know the term ‘casserole’ may be old-fashioned but I happen to love casseroles. They remind me of my mom’s home cooked meals growing up and they are pure comfort food. Which is something that we all need. Cheese and pasta are perfect together in this cheesy lasagna casserole.

This casserole is not necessarily easier than lasagna because you still have to cook the noodles separate, mix up the cheesy mixture, and then make the ground beef and sauce mixture. But, it is a fun way to enjoy lasagna and I guarantee you that everyone will eat it with no complaints.

It’s loaded with cheese and pasta. I mean really, how could that ever be a bad thing πŸ™‚

The cheese layer on top is THE BEST thing about this casserole. Of course, if you want to “reduce calories” go ahead and decrease the amount of cheese. The way I think about it….. you’re not making a lasagna casserole for diet food so go ahead and make it all the way cheesy. It’s so yummy and worth it at least once or a couple times during comfort food season.

This recipe takes a few pots to cook the pasta, cook the meat mixture, and then a bowl to mix up the cheesy mixture. It’s a bit more prep and work than those easy and quick dinners I like to post, but it does come together fairly fast and easily.

I like to cook my meat mixture while the pasta is cooking. Then while the meat is simmering I take a couple of minutes to mix up the cheesy mixture. That way when the pasta is done I am ready to make the casserole.Β

It won’t look like much when it comes out of the oven but once you dig into that cheesy top layer, the noodles, and the flavorful meat sauce, you won’t even care what it looks like because it is so yummy. The ultimate comfort food!

Oh, and I should warn that this recipe makes a lot! So be prepared for leftovers or to feed guests. Or, if you have a boy that likes to eat an entire batch of these energy balls and about half the pan of this lasagna casserole then you may not need to worry about leftovers πŸ™‚Β

Cheesy Lasagna Casserole

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, finely diced
  • 3 garlic cloves, minced or pressed
  • 1 teaspoon dried basil
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 jar (24 oz) spaghetti sauce
  • 1 container (24 ounces) 4% cottage cheese
  • 2 large eggs, lightly beaten
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons dried parsley flakes
  • 2-3 cups shredded mozzarella cheese, divided
  • 6-8 slices provolone cheese
  • 1 box (16 oz) medium pasta shells, cooked and drained

Instructions

  • Heat oven to 325 degrees. Spray a 9x13 baking dish with cooking spray. Set aside.
  • In a large skillet pan, cook ground beef, onion, and garlic until beef is no longer pink. Drain and return to skillet. Add the basil, Italian seasoning, salt, pepper, and jar of spaghetti sauce. Mix together and bring to a low boil, reduce heat to medium low and let simmer for about 10-15 minutes while the pasta cooks.
  • Cook pasta according to package directions. Don't forget to salt the water.
  • In a large mixing bowl, combine cottage cheese, lightly beaten eggs, parmesan cheese, parsley flakes, and 2 cups of the mozzarella cheese. Stir together.
  • When pasta is done, drain it and immediately add to the bowl of cheese mixture. Stir to make sure the noodles are coated. Pour into your prepared baking dish and evenly spread it out.
  • Dump the meat mixture on top of the noodles and spread it out evenly. Top with the slices of provolone cheese.
  • Cover with tin foil (spray the side of tin foil that touches the food with cooking spray to prevent sticking). Cook for 45 minutes.
  • Sprinkle with remaining 1 cup mozzarella cheese and bake, uncovered for 10 minutes. Let stand for 10 minutes before serving.

Notes

If for some reason your store does not carry the 24 oz containers of cottage cheese. Buy the standard 16 oz container + 1 cup of sour cream to equal the 3 cups (24 oz) of cottage cheese.
