OOEY GOOEY CHRISTMAS CHEX MIX
I am sure that this is not the real name of this recipe, and some of you probably call it something else, but this Christmas Chex Mix is a yearly tradition for my family and because we only make it at Christmastime we named it accordingly 🙂
A snack mix with Chex cereal, golden grahams cereal, flaked coconut, and sliced almonds all covered in a sugary ooey gooey (in a good way!) buttery syrup.
It's one of those recipes that you just can't stop eating. It's also great for Christmas treat plates or put some into a clear bag and tie it up. It stays soft so it's perfect for gift giving.

INGREDIENTS NEEDED FOR CHRISTMAS CHEX MIX
Corn Chex Cereal
Golden Grahams Cereal
Sliced Almonds - If you prefer a different nut then use that. I have also made this with half cashews and half almonds and it's amazing! But I have found that sliced almonds are generally the best in this snack mix.
Light Corn Syrup - I know some won't like this ingredient but you need it! It helps get that ooey gooey in the recipe and it helps the syrup part stay soft and not harden/crisp up when the Chex mix dries on the cookie sheet. So there really is no substitution for this.

Does this snack mix stay soft or harden?
- I get asked this question all the time about this recipe. It does stay soft. The snack mix forms together and sticks together, but it will stay soft. Even while it's cooling on the cookie sheet at room temperature it will stay soft. Same thing if you put it inside a bag for neighbor delivery, it will stay soft inside the bag.
Can I substitute the corn syrup in the recipe?
- Some won't like this answer (and I am sorry!) but no you cannot use something else in it's place. There really is nothing else to use. The corn syrup gives the snack mix the 'ooey gooey' and it's what keeps it soft even after sitting out.
How do I store Christmas Chex mix?
- It's best to store it at room temperature. I always put leftovers into a gallon-sized Ziploc bag and leave it out for several days at room temperature. I have found, and this may be personal preference, that after about 3 days the mix tends to get too soft for my liking. But everyone is different and you may love it that way.
- I will also mention that the mix tastes best after it has had a chance to sit at room temperature, on a cookie sheet according to the directions below, for several hours before serving it or eating it. It's good right away, but as it sits there the syrup softens the cereal slightly and infuses that sugary stuff all over it.

Christmas Chex Mix
- 6 cups Rice Chex cereal
- 6 cups Golden Grahams cereal
- 2 cups sweetened coconut flakes
- 2 cups sliced almonds
- 1¼ cups granulated sugar
- 1¼ cups light corn syrup
- 1 cup (2 sticks) salted butter
- Prepare a cookie sheet by spraying it very lightly with cooking spray or line it with parchment paper or tin foil. Set aside.
- In a really large bowl, or two separate bowls if you don't have a really large bowl, add the corn Chex cereal, golden grahams cereal, coconut, and almonds. Stir together to combine. * If you don't have a bowl big enough simply divide the ingredients between two bowls.
- In a medium saucepan, over medium-high heat, combine the granulated sugar, corn syrup, and butter. Let melt and bring it to a boil. Once boiling, boil it for 2 minutes, and then remove it from the heat. Let the syrup cool for 2 minutes before pouring it over the cereal mix.
- Pour the syrup over the snack mix and mix it really well to coat all the cereal.
- Dump the Chex mix onto the cookie sheet and spread it out as best you can. It will be overlapping and on top of each other and that's ok.
- Let the Chex mix sit out at room temperature for 2-3 hours so the cereal can soften and the flavors combine. Store leftovers in a covered bowl, or a gallon-sized Ziploc bag, at room temperature for several days.
