My sister had her first baby on Wednesday! I can’t believe my little sis is a mommy now and I know those two will make great parents. My kids adore their uncle Josh so I know their new little boy is in for a great & fun life.

I have a few pumpkin recipes I want to post but since my sister had her baby I decided to post this creamy spinach sausage pasta bake. If I lived closer to her this is the dish I would take to her house for a new-mom meal. It’s the perfect family dinner, company dinner, or new-mom meal.

It’s a pasta bake loaded with crumbly sausage, cream cheese, creamed spinach, Italian tomatoes, and mozzarella cheese. It’s so creamy. filling, and yummy. I had never used creamed spinach before this recipe but I must say that I’m hooked now!

The only creamed spinach I could find was one of the ‘steam fresh’ packs that you cook in the microwave for 4-5 minutes. It worked just fine. I would actually suggest one of those because you can cook it in the microwave while you prepare the rest.  I have seen creamed spinach in a box, you just want to make sure that it is thawed completely before adding it to the pasta mixture.

Cut your cream cheese block into cubes. It will melt faster and be easier to combine it all together. If you like it spicier use a spicy Italian sausage. I used a mild and it was perfect for us. The original recipe calls for only 3 cups of dry pasta, but I found that it was not nearly enough. So, I cooked the entire 1 lb box and used all of it except for maybe 1 cup worth, give or take.
