EASY MINESTRONE SOUP

Minestrone soup is one of my all-time favorite dinner. It’s usually a tomato and broth based soup, lots and lots of chopped vegetables, and small pasta noodles.

I love this easy version of the classic soup because it uses convenient frozen vegetables, which means no spending 30 minutes chopping veggies, and it has added ground beef to make it nice and filling.

Beef Broth – I always buy the canned beef broth but you can also use water + beef buillon base instead. One can of beef broth is *almost* 2 cups (it’s short by about 2 tablespoons) so if you do use water + beef base go ahead and just measure out 6 cups of beef broth. When I use the cans I always buy 2 of the low sodium and 1 can of the regular.

Frozen Mixed Vegetables – No chopping forever! Just open up a bag of frozen mixed veggies and pour it in. I use a bag of carrots, corn, peas, and green beans but feel free to use whatever you want. 

Diced Tomatoes & Tomato Paste – Along with the beef broth, the tomato paste makes the base of this minestrone soup. Tomato paste acts as a thickener to the soup and gives it a deep and rich tomato flavor. I prefer to use petite diced tomatoes in this recipe but feel free to use the regular diced tomatoes. If you want even more flavor, use a can of the Italian style diced tomatoes (w/ oregano, garlic, and basil)

Small Shell Pasta – I have found that small shell pasta works the best in this recipe. It’s small so it cooks in the pot within the simmer time, and the small shells soak up the broth. But, you can use any small shaped pasta you have. Like elbow or even ditalini pasta would work also. 

Beans – Use any type of bean you want. I prefer the light red kidney beans or the white navy beans. Great northern beans would be great in this or even chick peas.

MY TIPS FOR THIS EASY RECIPE

  • This soup can simmer for longer if you need it to. Once the pasta is cooked through, I will typically let it sit on the stove at low heat until it’s ready for dinner. I am even thinking that you could put it into the slow cooker and cook it on LOW heat for several hours as well. Cook the ground beef with the onion and salt/pepper, and then add everything into the slow cooker. 
  • If you are using water + beef base then just measure out 6 cups of it. Three cans of beef broth is slightly short of 6 cups. 
  • I buy two cans of the 50% less sodium beef broth & one can of the regular beef broth. You can use whichever kind you want but just adjust and check the salt level depending on how salty the beef broth is you’re using.

Ingredients
  • 1 pound lean ground beef
  • 1 white onion, finely diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cans (14.5 oz each) beef broth
  • 1 can (14.5 oz) petite diced tomatoes (do not drain)
  • 1 can (15 oz) kidney beans or white navy beans (drained & rinsed)
  • 1 can (6 oz) tomato paste
  • 1 package (16 oz) frozen mixed vegetables
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1 cup small shell pasta (uncooked, dry pasta)
Instructions
  1. In a soup pot, over medium-high heat, brown and crumble the ground beef, onion, salt and pepper until beef is no longer pink. Drain.

  2. To the ground beef, add the beef broth, diced tomatoes, beans, tomatoes, tomato paste, frozen vegetables, and seasonings. Bring to a boil.

  3. Once boiling, add the dry pasta and reduce heart to medium. Let cook/simmer for 10 minutes. Make sure the pasta is cooked through and serve!

  4. Once the pasta is cooked, you can turn the heat to LOW and let it simmer on the stove top until you need it.

Recipe Notes

To make this in the slow cooker - Brown and crumble the ground beef with the onion, salt, and pepper. Drain and add it into the slow cooker. Add the remaining ingredients (not the pasta) and let it cook on LOW heat for 5-6 hours. 30 minutes prior to eating, add the dry pasta and let it cook the remaining 30 minutes. 

The seasonings are very adaptable for this recipe. Add some or increase a seasoning if you love it!

Small shell pasta is the best to use or ditalini pasta and elbow pasta are other good ones. You want a small pasta that will cook within that 10 minute cooking time.
