This summertime break is getting the best of me. You would think that one would have loads of more time; no waking up early for bus stop, no after school activities, no hours spent on homework, no school activities. But no….. I swear I have less time during the summer when all the kids are home!

I mean, let’s keep it real here, I have not laundry in at least 2 weeks. I am dyyyyying over here people. Hence, why there were not many posts on the blog this week. But there is no way I would forget about the weekly menu plan. Menu planning is like the one thing I am good at, the one thing I can actually get done during the week, and it’s my sanity saver when that dreaded 5 o’clock hits and everyone is starving.

Pineapple Teriyaki Chicken Stir-fry

PINEAPPLE TERIYAKI CHICKEN STIR-FRY

It’s quick. Only takes 30 minutes and the flavor is so tropical and out of this world delish.

Seasoned ground beef, crushed tortilla chips, and lots of cheese make this taco salad casserole a family favorite dinner! Serve with shredded lettuce, chopped tomato, avocado, olives, and sour cream for a fun twist to a traditional taco salad.

TACO SALAD CASSEROLE

Change up traditional tacos with these green chili turkey tacos. Flavorful ground turkey with green chiles and chopped olives. Top with shredded cheese, sour cream, and avocado for an easy 30-minute and one pan dinner!

GREEN CHILI TURKEY TACOS

These are a super fun twist to traditional tacos and can be ready in about 20 minutes!

Teriyaki chicken rice bowls are perfect for a busy weeknight dinner. Ground chicken, broccoli, and carrots simmer on the stove top in a delicious and super simple teriyaki sauce. Serve over rice and garnish with green onions! Dinner will be so yummy.

TERIYAKI CHICKEN RICE BOWLS

Another 30 minute meal. This is one of my very favorite things to eat for dinner. Ground chicken + veggies simmer in the most amazing homemade teriyaki sauce.

Chunks of chicken, onion, and sliced peppers cook in one pan on the stove top. Mix in some flavorful spices and ranch dressing for the best 30 minute meal. These skillet chicken ranch fajitas are perfect for a busy weeknight.

SKILLET CHICKEN RANCH FAJITAS

Chunks of tender chicken plus fajita vegetables all covered in ranch! Fun twist to traditional fajitas.

Chocolate chip cookie blondie bars are a chewy cookie bar loaded with chocolate chips and the best dessert! These bars bake in one pan and are so simple to make. They bake up perfectly sweet & chewy each time with crisp, buttery edges and a super soft middle. If you love chocolate chip cookies then you will want to make these.

CHOCOLATE CHIP COOKIE BLONDIE BARS

These are amazing! Soft, thick, chewy, and loaded with chocolate. Really easy to make too.
