This one pot wonder is so comforting and delicious. The sour cream in it may seem odd but it’s what makes this soup so creamy. It also uses leftover chicken so it’s a great recipe to make when you’re cleaning out the fridge or pick up a rotisserie chicken from Costco when you’re there. Or any grocery store… I just love Costco 🙂
So easy to make with convenient ingredients like canned diced tomatoes and jarred spaghetti sauce. The cream cheese and mozzarella cheese makes it so creamy and it’s super kid-friendly too.
Probably one of my personal favorite dinner recipes! I love to serve them with this salsa verde sauce or you can serve these taquitos with sour cream, salsa, and guacamole. Whenever I make these taquitos, this cilantro lime rice or easy mexican rice always makes an appearance.
If you own an Instant Pot then be sure and make this! The sauce is so good you could drink it and it makes plenty so there is enough to drizzle over the rice.
Don’t let the Velveeta cheese scare you! I don’t use it often but the few recipes I use it in, are always family favorites. The Velveeta cheese melts so smooth into this spaghetti casserole that has a taco twist to it.
