You can’t get fresher than this fresh corn avocado salsa! Sweet crunchy corn, creamy avocado, and juicy red tomatoes all soaked in a simple lime juice, seasonings & kosher salt dressing. Eat by the spoonful or dip with chips, either way you won’t be able to stop!
I think it’s probably safe to assume that I love, love, love salsa & dip type recipes. I mean what’s not to love about the creamy avocado (my #1 most favorite food) paired with fresh tomatoes and then soaked in a lime juice + kosher salt dressing. You can’t get fresher than that, I promise π
If you are addicted to salsa, bean dips, chip dips, etc. You have to try out some of these other ones on the blog. They all have the same ingredients (for the most part) but each one is totally different and unique.
I love this time of year because of all the fresh, seasonal produce at the stores. I have only ever cooked my ears of corn in boiling water, never have I just cut the kernels off the cob raw and eaten them. Cutting the kernels off the cob raw and eating them or adding them to a salad or a salsa, adds a whole new texture and flavor. The corn kernels are so crunchy and so sweet. You’ve got to try it!
One tip that I always tell people for salsa type recipes is to not add additional salt without first tasting the salsa with a chip. Tortilla chips (depending on which brand) can be very salty, so test out the dip with a chip and then decide if you need to add more salt. I initially tested this out with a spoon and was about to add more salt, cause I thought it needed it, but then I tried it with a chip and it was perfect.
I’ll be honest and tell you that I ended up eating most of this with a spoon π But if you take this to a BBQ or picnic, more then likely people will use chips. Either way, it’s delicious.
Use whatever onion you prefer. Red onion goes well with salsa recipes. I chose to use a sweet onion because that's what I had.
If you want this spicy, add a jalapeno (seeded or not) to the recipe.
I ended up using 3 ears of corn because I love corn!
Ingredients
- raw, fresh corn kernels from 2 ears of corn
- 1 avocado, chunked
- 1/4 - 1/2 cup onion, finely chopped
- 3 roma tomatoes, seeded and chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons (1 small lime) fresh lime juice
- 1/2 teaspoon cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon garlic powder
Instructions
- Toss all of the ingredients in a medium-size mixing bowl. Gently fold/stir together.
- Taste and add additional salt. I would suggest tasting with a tortilla chips as that will effect the salt content too, before adding additional salt.
