I love finding new grilling recipes. For me, grilled chicken or whatever it may be, is always an easy dinner to prepare. It usually involved a marinade so I will mix that up in the morning and let the chicken hang out in the fridge all day. Soaking up all that flavor. When it’s dinner time, it’s all on my husband to fire up the grill and cook the chicken.

I have actually never started the grill or grilled anything on it….. I guess I just always assume that it’s his job and that’s why he always does it. Plus, he loves grilling so he’s ok with it πŸ™‚Β

This grilled pesto marinated chicken is probably my very favorite grilled chicken recipe. It is so simple to prepare; only 4 ingredients + some chicken breasts.

Combine everything into a Ziploc bag for easy, no dish clean up. Let it sit in the fridge for at least 2 hours to soak up all that flavor and then grill! You can also leave it in the fridge for up to 12 hours. I prefer to make it in the morning and then let it marinate all day. But, I have made it with only the minimum 2 hours of marinating and it is amazing….. so if that’s all the time you have then go for it.Β

I served this with these parmesan roasted potatoes. Which, if you ask me are really the perfect side. Start to finish, you can have this grilled pesto chicken and the potatoes done within 30 minutes. A healthy, delicious, flavor filled meal with minimal effort that everyone can enjoy!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pesto
  • 1/4 cup rice wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar

Instructions

  • Combine all ingredients into a Ziploc bag, or a bowl, and mix together until all chicken is coated with the marinade.
  • Let marinate in the fridge for at least 2 hours or up to 12 hours.
  • Grill the chicken to temperature and enjoy!
