HONEY BUTTER SKILLET CORN

One of the only vegetables my family all agrees on is corn! My kids love corn on the cob, corn casserole, slow cooker creamed corn and just plain old canned corn or frozen corn. This honey butter skillet corn is so creamy, sweet, delicious, and something everyone loves. 

It cooks in one skillet pan and it uses frozen corn! Simple to make with only 4 ingredients + salt & pepper.

INGREDIENTS YOU NEED FOR SKILLET CORN

Butter – I always use salted butter. If you use unsalted butter than you may need to add additional salt. Just taste and add more to preference. 

Honey

Frozen Corn – I prefer the gold n’ white corn for this recipe but any frozen corn will work. Like sweet yellow corn, white corn, or yellow corn. 

Cream Cheese – You only need 2 ounces of cream cheese for this honey butter skillet corn recipe. One block is 8 ounces so you will have some leftover. Which means you will just have to make it again 🙂

Honey Butter Skillet Corn is an easy 15 minute side dish with frozen corn, honey, butter, and cream cheese! So creamy, sweet, and delicious.

Ingredients
  

  • 2 tablespoons butter I use salted
  • 2 tablespoons honey
  • 1 bag (16 oz) frozen corn
  • 2 ounces cream cheese cut into chunks
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a skillet pan, over medium-high heat, melt the butter and honey. Once melted add the frozen corn and cook for 5-8 minutes, stirring occasionally, until cooked through.
  • Add cream cheese, salt, and pepper. Stir together and let it cook, about 3-5 minutes, while stirring occasionally.
  • Serve immediately. Leftovers keep well, covered in a container, and stored in the fridge.

Notes

The recipe has 6 side dish servings and the nutrition facts are for 6 servings, but if you are feeding little kids you can probably get closer to 8 servings from this recipe. 
I love using the gold n' white corn for this recipe but any frozen corn will work. Make sure it is the 1 lb (16 oz) bag of frozen corn.

      I think that would be ok. I’ve never used canned corn for this recipe so I can’t say for sure what the results would be. It seems like it would work just fine.

  4. This is really good! Mine didn’t come out creamy, though. I wonder if it’s because I used uncooked wild honey? I also didn’t go by exact measurements because I was only making one serving to try it out on my daughter. I tried a couple of bites and I think it’s really yummy and actually does taste like buttermilk biscuits with honey! I might even like it a little sweeter. 🙂 My daughter liked it too.         I had corn my hubby bought off the side of the road and it wasn’t the greatest. I love corn so since i didn’t want to waste it, i cut it off the cob and made a double recipe. I loved loved it!! I am so happy i I made this!! Can’t wait to try it with frozen corn next time. I just cooked it a lil longer in the pan with the honey and butter.           I have never had any leftovers of this so I can’t say for sure 🙂 my family gobbles up every last drop. I think it would reheat well but because of the cream cheese it may look curdled almost… but once reheated it should be fine.

    I loved it. Its so sweet and good. I had one issue. The cream cheese stuck to corn and didnt melt into a cream. Did this happen to anyone else? What can I do different?

      Make sure the cream cheese is softened before you add it into the corn. That should help and solve the problem of it not melting all the way. I will go back and double check the directions and make sure to add this note.

        2. Make sure you are using full fat, block cream cheese. Whipped or low fat will not melt the same because they have additives.

          I think it would work in a crock pot- I’m not sure the temperature you would want to do but my first thought is to do a couple of hours on high in the crock pot. My only concern with it sitting for a few hours would be the separation of the sauce and the corn so just make sure to give it a stir every so often. Let me know how this turns out! I love to hear how substitutions or adjustments work for people!

      When I made it I melted cream cheese with the butter and honey before adding the corn. That helped alot

    1. I can’t have dairy though I can usually find substitutes for things. Cream cheese is one I haven’t found good enough to cook with. Would spur cream work? I use tofutti brand sour cream and it’s creamy just not as rich.

    Tis’ the season for fresh corn. You can use the microwave method to shuck 2-3 ears depending on the size (may take 4 ears). This time of year I keep several ears of fresh shucked corn in gallon freezer bags in the refrigerator. Before they spoil I boil them a few minutes, cool them and then put them in the freezer. This corn works great for this recipe. We love it. Thanks for sharing.

    I want to make this recipe but, what I have is fresh corn. How long would you suggest that I cook the corn prior to making this. This recipe sounds soo good! I’m glad that I came across it as I was trying to think of another way to fix corn.

      Hey! I have not tried it with fresh corn but I am thinking you could either just cut it right off the cob and put it into the pan (when it calls for the corn in the recipe) and then let it cook until softened. Or you could boil the corn cobs for 3-5 minutes in water and then cut the corn off the cob and then add it into the pan. I think either way would work but I would suggest the extra step of boiling the corn to ensure that the corn is cooked and soft. Hope that helps 🙂 Thanks for being here.

  15. I was wondering if anyone made this without the cream cheese? My son is sensitive to dairy but I was thinking he would enjoy the sweetness of it! I will try it and let you know!

      Hi Shenna: I have to deal with several of my adult kids dairy issues. Number one I’d try the vegan cream cheese available at Whole Foods or equivalent. Very good. Also being from Wisconsin I’m supposed to promote dairy but I also have a vegan daughter and I have used plant based margarine measure for measure. Always a hit and great for a busy holiday dinner when everything seems to get ready at the same time. Good luck,

    I made this tonight for the first time. I used 8 small ears of fresh corn and 1 jalapeno, very finely chopped. I gently sauteed the corn and jalapeno in the butter/honey mixture and when tender, added the cream cheese. This is a delicious, fresh and easy side dish that my husband and I adored. Now that it is corn season in Michigan, it will appear on our dinner table frequently. Thanks for this excellent recipe!

    I was wondering if you could give any advice about making this for a crowd. Can you make it in a crockpot? Or make it in the pan & keep warm in a crockpot? Would like to make for upcoming family get together. Right now I am just rating a 3 because I haven’t made it yet. But I know it will be a 5 because I love corn.

      You can easily double or triple the recipe. I do think it would keep really well on the warm setting in the crock pot. That is what I would do if I were serving a crowd.

      I have never frozen this so I can’t say for sure how it would turn out. It seems like it would freeze fine, but as it thaws it may be separated or curdled due to the cream cheese. Maybe add some additional liquid when reheating it and that should help.

  23. This had the potential to be really good however, I think it would’ve better (for me) to use canned or fresh corn. The frozen corn came out kind of tough. Also, the taste of the cream cheese was a bit overpowering so, I’ll use a little less the next time. Worth giving it a second try!

  28. I was excited to find this recipe yesterday as it looks very similar to a frozen corn with sauce that my family loves that has been difficult to find recently.
    We tried it last night and really liked it.
    I made a few changes though.
    16 oz bag of corn doesn’t go far in my family (that includes 2 growing boys) so I decided to try doubling everything:
    4 Tabelspoons butter
    4 Tabelspoons honey
    32 oz bag frozen corn
    4 oz cream cheese

    I thought the honey was a little overpowering for what I was looking for ( I often make corn with a honey glaze sauce and that combination was very similar). I was attempting to get a thicker, creamier sauce so I kept adding cream cheese to see what would happen. In the end I ended up using the entire 8 oz block of cream cheese and was a little nervous that it wasn’t going to turn out good. I am happy to report that it turned out fantastic (almost exactly what I was wanting) and the request to make again are unanimous.

      This is best served right after making it. I have never made it the day before. I would imagine you could reheat it but again it’s best served right after it’s made.

    2. I have had leftovers (due to making a larger batch). It heats up okay the next day, but didn’t seam to be as creamy. It really is best served right away. It’s very quick and easy to make right before serving.

  55. This is a good recipe but if you want sweet corn without adding anything. Just cut the corn off of fresh cobs and scrape them for all the juice and then cook it in a small amount of butter slowly untill hot. No additives and it will be very sweet and delicious. Guaranteed!

    Absolutely a hit ❤️. I added cayenne pepper, crushed red pepper flakes, and Parmesan cheese to it. I used more cream cheese but it was so good! My son doesn’t even like corn and he couldn’t stop eating this. (Loved it)

    LOVE this stuff! Sometimes when we make big batches, there is leftover and it reheats on microwave or on low in a saucepan. I love this as is, but a lot of times I do a little less honey, about half again as much cream cheese and I add some spices: 1/4 t onion powder, 1/8-1/4t poultry seasoning, 1/8 t garlic powder and several turns of PINK peppercorn (and if you haven’t tried that…DO! it’s great in this and other stuff!)

    It says “leftovers keep well”. I don’t think I’ll ever find out if that’s true. I served this up to friends tonight and there wasn’t a single kernel of corn left.       Technically you could, the cooking time may be a little different since the corn doesn’t need to thaw. I’ve never tried using canned corn so I can’t speak to the final result when it comes to taste or texture. Let me know if you try it and how it turns out!

    So easy and so yummy! I cut back on the honey -ok, I didn’t really measure anything- and melted butter, cream cheese and honey all together before adding the corn. I used freshly-picked corn (blanched and then cut off the cob) which was DELICIOUS. I also added sliced jalapeños. New, easy family fave!!!!

    Because I wanted to do something fancy I used herb cream cheese and it was super delicious. I even tried all that on corn on the cob I got for ears and this let them sit and have fun and all that yummy Ness of cream cheese, butter, honey, and salt and pepper to taste, even a shake or two of garlic powder.     I’d love to make this for my family Thanksgiving but I’m an hour away. Can I make and then put in a crockpot to keep it warm?

      I have never tried doing this but I think it would work just fine. You may need to add some additional broth or milk to loosen it up for serving. I just worry it might get too thick if it’s inside a slow cooker on the warm setting for long.

    Interesting recipe. I used 1 more Tbls of honey & a half more Tbls of butter. So easy and quick to cook. Turned out really well.
    My sister wants me to make it next week for Thanksgiving this year. 2023.
