Β Fruit dips are one of my favorite things to make during the spring & summer. They make a ton so there is always lots to feed a crowd, or in my case, there is lots to eat for breakfast, lunch, and dinner, and maybe another breakfast πŸ™‚

Seriously, I could not stop. I especially loved this key lime cheesecake fruit dip with granny smith apples.

Β My 2 year old couldn’t get enough of this either. I wish I would have gotten a “behind the scenes” picture of this because she was standing right next to the plate of fruit dip and kept sneaking little pieces of the pineapple and then stood there saying {over and over again} “dip. dip. dip” I would dip it for her and she just kept begging for more and more. I’m fairly positive she managed to eat most of the pineapple.

Β You’ll start off by putting a softened bar of cream cheese in a bowl and blending it until its smooth and creamy. It’s super important that your cream cheese bar is softened, otherwise there will be lumps in the fruit dip. I normally put mine in the microwave for 20 seconds to get it nice & soft.

Add in some sweetened condensed milk, key lime pie yogurt, vanilla extract, and some fresh lime. Mix all together. At this point, it will be runny and that’s ok. The fruit dip needs to sit in the fridge for at least 3 hours so that it has time to thicken up.

Β Serve with assorted fruits of your choice; grapes, apples, pineapple, kiwi, strawberries, blueberries, cantaloupe are a few that I can think of. With fruit in season right now, I think just about anything would be good dipped in this stuff. My very favorite is green granny smith apples. I love that sweet and slightly tangy/sour of the dip and apple together.

Our other favorite was fresh pineapple.

Key Lime Cheesecake Fruit Dip

Ingredients

  • 1 package (8 oz bar) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 containers (6 oz) key lime pie yogurt
  • juice & zest from 1 lime

Instructions

  • Put softened cream cheese bar in a mixing bowl and blend together, with a hand mixer, until it's smooth and creamy.
  • Add in sweetened condensed milk, vanilla extract, key lime pie yogurt, juice & zest from 1 lime. Blend together until completely combined and creamy.
  • Store in fridge for at least 3-4 hours before serving so that it can thicken up. You can even store in the fridge overnight.
  • Serve with fresh fruit.

Notes

PLAN AHEAD: this dip needs to refrigerate for at least 3-4 hours before serving so that it can thicken up. Take out of fridge right before serving because the longer it's out at room temperature the softer it will get.

Place bar of cream cheese for about 20 seconds to get it nice and soft. This will prevent lumps.
