MONSTER COOKIES! If you’ve followed my blog for any amount of time you know very well by know that we love any variety of monster cookies. Monster cookies is a combo of peanut butter, oats, chocolate chips, and m&m’s. Like, basically life’s essentials. Right?! 🙂 

Don’t confuse todays monster cookie bars with my {no flour} monster cookie bars that are also on the blog. The monster cookie bars today do have flour in them, so if you’re looking for a gluten-free treat then be sure and check out the no flour ones.

This recipe has an egg and an extra egg yolk in the dough. The egg yolk adds so much moisture and richness to the cookie bar. They also bake in a 9×13 baking dish so it’s perfect when you’re just wanting a treat for the family or treats for after school.

At least once a week I always love making a fun treat like these for my kids when they get home. After a long & hard day at school there is nothing like coming home to a cookie bar to munch on.

I’ve made these several times now and trust me when I say that you’ll be tempted to let them cook longer because they won’t “look” done. They will still be pale so you might think they need more cook time. Don’t do it! If you cook these for too long then they will be very dry and crumbly. And that would just be so sad. These bars are seriously amazing cause they are so soft & chewy.

For an extra pretty presentation, reserve some of the m&m’s, chocolate chips, and peanut butter chips to sprinkle on the top of the dough before baking. I love doing this! I also love using the mini chocolate chips & mini m&m’s. But you could use the regular size too. I just love how the mini sizes get spread out all over the cookie so pretty much every single bite has all the mix-ins.

Ingredients
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup quick oats
  • 1/2 cup (1 stick) butter, softened
  • 1/3 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 large egg yolk (discard the whites, only use the yolk)
  • 1/2 cup peanut butter chips
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini m&m's
Instructions
  1. Preheat the oven to 350 degrees. Lightly grease a 9X13-inch baking pan, or line with parchment paper. Set aside.
  2. In a small bowl, whisk together the flour, baking soda, salt and oats.
  3. In a seperate large bowl, or in the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, peanut butter, brown sugar, and sugar until fluffy looking and light in color, 2-3 minutes.

  4. Add in the vanilla, egg and egg yolk. Blend together well.
  5. Add the dry ingredients into the wet and mix just until combined.
  6. Add chocolate chips, peanut butter chips, m&m's and mix together just until candies are incorporated into the dough.
  7. Press the dough into the prepared pan. Bake for 15-18 minutes or until very lightly browned on the edges. The bars will still look pale and slightly underdone in the middle. That's ok. Don't over bake or the bars will be dry!

  8. Let the bars cool in the baking pan for 20-30 minutes. Cut into squares.

Recipe Notes

If wanted reserve some of the chocolate chips, peanut butter chips, and m&m's to sprinkle on top of the dough before you bake them. Be sure and gently press them down.
