I seem to always post in themes each week. And trust me this is not by design. That would require actually planning my posts in advance and my life is not that put together. It’s summer, school is out and all my kids are at home. My brain seems to go hide during the summer. It comes back on the first day of school.

I just posted this tropical monkey bread yesterday which also happens to have macadamia nuts in it too! A couple weeks ago I went crazy posting no bake pies and desserts. Forgive me please….. but judging by how popular they have become I’d say you all love the desserts! We can be friends then πŸ™‚

The crust is made from crushed shortbread cookies and macadamia nuts. I mean could there be anything better?! I happen to love shortbread cookies. Whenever we fly somewhere we usually go with Southwest, mainly because they give out the best treats ever, and with 4 kids that is a good enough reason for me! Plus bags are free and we’re cheap πŸ™‚Β 

Anyways, one of the choices of snacks are the Lorna Doone shortbread cookies and I always have to grab a pack or two of them.Β

This pie is so creamy, smooth and fresh tasting. My kids even loved it. My oldest declared “wow mom, this is really lime-y!” I asked him if that was a good or a bad thing and replied with two thumbs up.Β 

Loaded with lime, cookies, sweetened condensed milk, macadamia nuts, and whipped cream. It really is the perfect summer dessert.Β

Ingredients

    crust
  • 1 cup crushed shortbread cookies
  • 1/2 cup chopped or crushed macadamia nuts
  • 1/4 cup granulated sugar
  • 5 tablespoons butter, melted
  • key lime filling
  • 1 package (8 oz) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup Key Lime Juice
  • topping
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1/4 cup coarsely chopped macadamia nuts
  • lime peel, optional

Instructions

  • In a small bowl, mix cookie crumbs, macadamia nuts, sugar, and melted butter. Press into bottom and sides of a greased (spray with cooking spray) 9 inch pie plate. Refrigerate for 30 minutes.
  • In a large bowl, beat cream cheese until smooth. Add in condensed milk and lime juice and beat together until blended. Pour into crust. Refrigerate covered for at least 6 hours. I prefer to refrigerate overnight.
  • When ready to serve: In a small bowl beat heavy whipping cream and powdered sugar until stiff peaks form. Spoon or pipe onto top of pie.
  • Sprinkle with macadamia nuts and lime peel if desired.

Notes

Using lime juice (squeezed from a lime or in a bottle) will not yield the same flavor or texture of pie. Use the Key Lime Juice as called for. I always find mine by the bottled juices and juice boxes. The only brand I have ever seen at stores is 'Nelly & Joes Key West Lime Juice'.

To avoid lumps in your cream cheese, microwave it for about 15-20 seconds to get it soft.

To crush shortbread cookies and macadamia nuts: place in a Ziploc bag and smash with a rolling pin or meat mallet OR use a food processor to crush them.

Just a warning: this pie does not slice perfectly like a cheesecake or cream pie. When you serve it, it more than likely won't retain it's "shape". It's a softer pie.
