Our youngest is 7 months old and he’s had to wear a helmet for the past few months to correct the growth of his head. His head was growing at an angle so the helmet corrects the direction of growth. He has check-ups every week in Baltimore. We live about 1 1/2 hours from Baltimore so when we do go there we always try and go somewhere else or do something because we already made the long drive so why not.
I’ve been wanting to go to IKEA for awhile now so we went there a few weeks ago after one of his appointments. I am slightly addicted to kitchenware, dishes, servings trays, and all that stuff so a store like IKEA is basically my favorite thing ever.
While there, I found this gorgeous fluted serving tray in a porcelain white color and knew I had to have it. I was brainstorming and trying to think of how I could use it and a fruit dip came to mind. All that colorful fruit against the bright white serving tray. So pretty.
I knew this easy pistachio yogurt fruit dip would be just the thing. Only 3 ingredients and some fresh fruit is all you need. I love to use vanilla yogurt because I love the pistachio + vanilla together. You could make it super healthy by using plain Greek yogurt and I bet you could even get away with using sugar-free pistachio instant pudding as well.
But, the one thing you should not change is the freshly whipped cream. It’s so much better than Cool Whip! But if you must then just know that the dip will be even sweeter because Cool Whip has sweeteners in it compared to plain whipped cream.
All the fresh fruit is my very favorite of summer. We used our favorites for this dip but any fruit would work. I am thinking cantaloupe would be delicious, apples, clementine oranges, cherries, grapes…… so many choices!

I really wish I would have known this before our shopping trip instead of on our way out! It would have made the experience a bit better 🙂 Four kids with unlimited space to run and beds and couches galore for them to sit on, and shelves full of glassware was not a good combination.

- 1 cup heavy whipping cream
- 1 small box (3.5 oz) instant pistachio pudding
- 1 container (32 oz) vanilla yogurt, regular or Greek
- In a bowl or stand mixer, beat the heavy whipping cream until stiff peaks form.
- Combine the instant pudding mix (DO NOT prepare, just use the dry powder), yogurt, and freshly whipped cream. Gently stir together to combine.
- For best results, refrigerate for 2-3 hours so it can thicken up and the flavors can come together.
- Serve with fresh fruit of your choice. Garnish with chopped pistachios if wanted.
