Do you have a garden? We used to when we first moved into our current house. We actually did really well at it for about 2 years and now that said garden is currently housing a new tree we planted in the backyard πŸ™‚Β 

No more garden for us…. which I am kind of totally fine with because I hated weeding that thing. Our house backs up to a big open field with lots of wooded area so we were always getting little critters that would come and eat it all anyways.Β

One of my very favorite things about summer is all the beautiful produce to choose from. Zucchini and squash happen to be two of my very favorites. There are so many ways to prepare them that it never gets boring.Β 

I love the idea of roasting the veggies because they get all the flavor infused to them and they get those crispy charred edges. Oh my, that is my very favorite part of roasting vegetables.

These are really simple to make too. Slice a zucchini and squash and then cut some small Campari tomatoes (or another small tomato). Lay them onto a cookie sheet. Be sure and not to overlap. If you do, you could end up with soggy vegetables that don’t get that crispy char on them. And that would be just be sad.

Drizzle some olive oil mixed with seasonings, then sprinkle on some parmesan cheese and then roast them in the oven. When they come out sprinkle on some chopped parsley.Β 

I always just use the cheaper grated parmesan cheese that comes in the can. You can use freshly shredded if you want to but I actually prefer the taste of the grated stuff. It has a saltier flavor to it that I love.

For easy clean up be sure and line your cookie sheet with some parchment paper. I cheat a little and get those pre-cut sheets —> which happens to be my very favorite product in my kitchen. You can find them with the tin foil, plastic wrap, etc. They are a huge lifesaver cause they already come precut so you just put one on the pan and go.Β

Ingredients

  • 1 zucchini, cut into 1/2" slices
  • 1 yellow squash, cut into 1/2" slices
  • 1 container (14 oz) Campari tomatoes, halved
  • 2 tablespoons olive oil
  • 3/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • pinch of pepper
  • 1/2 cup grated parmesan cheese
  • chopped parsley for garnish, optional

Instructions

  • Heat oven to 400 degrees. Prepare a rimmed cookie sheet (12"x17") by lining with parchment paper or spray with cooking spray.
  • Arrange sliced veggies onto the cookie sheet in a single layer.
  • In a small bowl, mix together olive oil, Italian seasoning, salt, and pepper. Drizzle over the veggies making sure they are coated.
  • Sprinkle the parmesan cheese over the vegetables.
  • Roast in the oven for 25 minutes.
  • To add some color to the veggies and crisp them a bit place the pan under the broiler for 1-2 minutes after the cook time. Watch carefully because they will burn very easily.

Notes

Campari tomatoes are small tomatoes that can be found by the packaged tomatoes in the produce section. If you can't find them, just substitute cherry tomatoes, grape tomatoes, or another small tomato.
