If you’re looking for the side dish that everyone will devour then you need this samoa cookie apple salad in your life. The creamy, cool coconut pudding and cool whip combined with crunchy & tart apples and then the sweet cookie pieces is utter perfection.

It’s also sweet enough that you could call it dessert too!

I know it’s crazy having cookie and salad in the same sentence but that’s what it is. A salad made with cookies. What could be better?! Well maybe a nap. Or some quiet time. Or, one afternoon of my kids not fighting. Or a maid (that would be awesome).

5 ingredients are all you need. If you have girl scout Samoa cookies then go ahead and use those. But these Keebler ‘coconut dreams’ are equally delicious and the store always has them. So basically that means you could pretty much make this samoa cookie apple salad anytime you wanted πŸ™‚

Now that is my kind of “salad”!

I chose toΒ go with tart granny smith apples and then sweet/tart Fuji apples. Use any apple you want but beware that if youΒ use red delicious then your salad will be much sweeter. I would highly suggest using granny smith apples. The tart flavor in contrast to the sweet cookies and the creamy coconut pudding is divine.Β 

Oh and did I mention that you use the entire package of cookies β™₯ β™₯ Unless of course you have sneaky kids who grab one each while you’re not looking. So technically mine was minus 3 cookies but still…..

Samoa Cookie Apple Salad

Ingredients

  • 1 box (3.4oz) coconut pudding
  • 1 1/4 cup whole milk
  • 1 1/2 cups cool whip
  • 3-4 apples, diced
  • 1 package Keebler Coconut Dreams or Samoas (18 cookies), chopped

Instructions

  • Whisk pudding mix and milk in a large bowl. Allow to rest for 5 minutes until firm. Fold in cool whip.
  • Add in the diced apples and the chopped cookie pieces. Gently stir together until combined.
  • Serve immediately or let it sit in the fridge for 1-2 hours before serving.

Notes

I highly recommend using granny smith apples. If you want to use a combination then use granny smith and gala or Fuji apples.

You can use 2% milk if you would rather.

I do not peel my apples. You can if that's what you prefer.

This is good eaten right away but my favorite way to eat it is after it's been in the fridge for 1-2 hours. It's really cold and the flavors seem to come together more. Keep in mind that the longer it sits in the fridge the cookies will become softer.
