My week long hiatus from the blog was not planned. I do have good news because while on my week break from the blog I found my perfect diet plan…….. a tooth ache! hahaha πŸ™‚Β 

Not really a tooth ache. I had some veneers put on my teeth about 13 years ago and the dentist told me, way back then, that they need replacing about every 10-15 years. So now I feel super old because I remember when he told my young self that I thought that I would never be this old. But I am. Anyways, so my tooth was hurting like crazy and I could not eat. If I wanted to drink I had to do this MacGyver move with my tongue to cover my tooth so it wouldn’t hurt like crazy when the cold liquid touched it.Β

Speaking of diets, these sesame chicken vegetable wraps are just what your diet needs. Weather you’re trying to eat healthy or not I know you will love these. They are packed full of all the good stuff. Spinach, carrots, bell pepper, edamame, cucumber, chicken and the best part is the sesame citrus dressing that gets poured over it.

I’m pretty sure I could drink that stuff.Β

Mix up the simple vegetable chicken mixture and get yourself some tortillas (wrap sized tortillas) and some sliced cheese. The cheese can be optional, bit in my world, it’s not πŸ™‚ I love using Muenster cheese but use whatever kind you like. I am thinking sliced pepper jack would be really good in these wraps.Β 

Stuff the tortilla with the vegetable mixture and a slice of cheese and roll up burrito style, or just fold it into a wrap. If you’re worried about the leftovers getting soggy in the fridge, just don’t pour the dressing over the entire vegetable mixture. Instead, pour the dressing over the salad when you need it.Β 

I actually like the salad mixture the day after. It’s softer, the flavors have come together more, but the veggies still have a slight crunch to them.Β

I also loved taking a fork and just eating the vegetable chicken mixture like a salad. Either way, I know you will love these delicious wraps. No oven needed and only a few minutes of prep time to cut the veggies and mix up the simple sesame citrus sauce.Β

Ingredients

    sesame citrus dressing
  • 2 tablespoons orange juice
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt, or more to taste
  • 1/8 teaspoon pepper, or more to taste
  • wraps
  • 2 cups baby spinach (about 2 handfuls)
  • 1 cup thinly sliced cucumber
  • 1 cup chopped sugar snap peas, trim the ends
  • 1 cup shelled edamame
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced bell pepper, red or yellow
  • 1 cup chopped, cooked chicken breast
  • 8 whole wheat tortillas, wrap size (or any tortilla of choice)
  • 8 slices of cheese (I use Muenster cheese)

Instructions

  • Combine all dressing ingredients into small bowl and whisk together until combined.
  • In large mixing bowl, combine all the vegetables and chicken. Stir together and then drizzle the dressing over it and stir again until combined.
  • To assemble wraps- If wanted warm a tortilla for 5-8 seconds, lay a slice of cheese down the middle and then pile it high with the vegetable chicken mixture. Fold up burrito style or fold into a wrap.
  • Store leftover vegetable chicken mixture in the fridge for a couple of days. If you don't want it to get softer, simply dress the amount you need and keep the dressing and salad separately in the fridge.

Notes

I buy the bag of matchstick carrots for this recipe. There will be extra so I save them to make these wraps again.

I buy a frozen bag of microwaveable/steam able shelled edamame (not in the pod still). I follow the directions on package and then let the edamame cool completely before adding to the salad.

You can use leftover chicken, grill or cook a chicken breast, use a rotisserie chicken or buy a 9 oz package of ready-to-use chicken strips at the grocery store (and then chop them at home).
