This slow cooker creamy chicken fajita chowder is so simple and easy too! All the classic flavors of a fajita but in creamy chowder form. I love serving this with cornbread muffins!
One of my favorite times is when I am in the kitchen cooking or baking with my kids. My two daughters love to join me in the kitchen whenever I am in there cooking. They will usually ask if we can go make brownies with sprinkles. It’s still their favorite thing to make 🙂 I know that when kids are able to be in the kitchen creating something and then seeing the results, it gives them a sense of pride and accomplishment.
I am so excited to be sharing this recipe today because not only is it delicious and easy, but it’s a simple recipe that you can get your kids involved too. My little girl loves to add the beans and frozen corn to the slow cooker. But I think her favorite part was pouring in the milk near the end of the cooking time. That girl loves milk 🙂 I’m all about shortcuts that make preparing dinner a cinch. Like Uncle Ben’s Ready Rice. Instead of spending a half hour making rice on the stove top or waiting for the rice cooker to be done; you simply open the package and dump it in. There are so many flavors to choose from; I chose the Chicken Flavored Brown Rice Ready Rice. But the Spanish Style, Creamy Four Cheese, or the Whole Grain Sante Fe Medley would be delicious in this chowder too. Pick your favorite!

Simply add a few ingredient into the slow cooker and let it cook all day. About an hour before serving, dump in the Uncle Ben’s Ready Rice, half & half milk, and some cornstarch to help thicken it. Serve with your favorite toppings and dinner is ready! We love this with some shredded cheese, chopped tomato, avocado, and some fried tortilla strips. I cut up flour tortillas (or you can use corn tortillas) into strips, heat up about 1″ of oil in the skillet pan, and then you fry the tortilla strips until crispy. Put on a paper towel lined plate to dry and sprinkle right away with some salt.
I like to put all the toppings into bowls and set it out on the table buffet style. Let the kids and my husband go to town and make their own chowder creation. You could really add anything you wanted; tortilla chips, crispy fried tortilla strips, cheese, tomato, avocado, sour cream, cilantro, lime, etc.

Use hot or medium salsa if you want an extra kick. This chowder, as written and using mild salsa is not spicy at all. It's great for little kids.
Adjust the salt to your liking. If you used low-sodium chicken broth you may have to add some salt at the end of the cooking time. I used the regular, full salt chicken broth and did not add any additional salt at the end of the cooking time.
You will find the find the fajita seasoning packet by the other seasoning packets; like taco seasoning, chili seasoning, etc.
For best results, cook on low heat for 6-7 hours. The chicken has more time to get super tender and it's delicious.
- 4 cups chicken broth
- 1 cup salsa
- 3 chicken breasts (about 1 lb)
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 fajita seasoning packet
- 1 pouch (8.8 oz) Uncle Ben's ready Rice Chicken Flavored Brown Rice
- 1 cup half-n-half
- 1 tablespoon cold water + 1 tablespoon cornstarch
- Combine chicken broth, salsa, chicken breasts, pinto beans, black beans, frozen corn, and fajita seasoning packet into the slow cooker. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- 1 hour before cooking time is done take out the chicken and shred. Add back in.
- Add the Uncle Ben's Ready Rice. Just open and dump the pouch. No need to cook it first.
- Add in the half-n-half.
- Stir together the cold water and cornstarch in a bowl and add to the chowder. Stir to combine everything together. Cover and let cook remainder of time.
- Serve with whatever toppings you prefer!
