We’re already halfway through summer break. I may or may not be cheering about that πŸ™‚ Ok fine, I am cheering about it! Easy, simple, 30-minute dinners, and slow cooker meals are the name of the game right now. This slow cooker Mongolian chicken has been a favorite of mine lately.

With the busy summer days, or should I say lazy summer days where I don’t feel like being in the kitchen, I love doing slow cooker meals because I can prepare it in the morning and it makes me feel like I actually accomplished something for the day when we all sit down to a warm and delicious dinner. Mom win!

Get your chicken breasts and cut them into chunks. Put the chunked chicken into a gallon-sized Ziploc bag with some cornstarch, salt & pepper and shake it up to coat the chicken. This is a great job for the kids to do!

Heat up some oil in a skillet pan and then cook the chicken for a few minutes just so they get a nice crispy exterior on them. You don’t want to or need to cook them all the way in this step.

Doing this ensures that even with the slow cooking, you’ll end up with coated pieces of chicken. It won’t be super crispy because you’re not frying them. It just helps them hold up to the slow cooker.Β 

Mix up a simple orange sauce in a bowl and then combine it with the chicken in the slow cooker. This is not one of those dishes that you can let sit in the slow cooker all day long. It only needs 2-4 hours on low. If you cook it too long it will be so tender and cooked that it will shred. Which is totally fine if you ask me! Still delicious and full of orange flavor but just shredded.Β

Cook up some rice, chop some green onions and dinner is ready. If you have sesame seeds then use them but If not, you really don’t need them. I happen to have a giant jar of them so I use them. Plus, my kids like to sprinkle the sesame seeds on their food. They seem to eat better when they can do something themselves at the dinner table.

Ingredients

  • 3 boneless, skinless chicken breast (about 1 1/2 lbs)
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons canola or vegetable oil
  • orange sauce
  • 1 cup chicken broth
  • 1/2 cup orange juice
  • 1/2 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup apple cider vinegar
  • 1 tablespoon orange zest
  • 3 garlic cloves, minced or pressed
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 2 tablespoons water + 2 tablespoons cornstarch

Instructions

  • Cut chicken breasts into 1/2"-1" cubes. Combine chicken, cornstarch, salt, and pepper in a gallon-sized Ziploc. Shake to coat.
  • Heat oil in a skillet pan over medium-high heat.
  • Cook chicken in batches, cooking for about 3 minutes on each side or just until it has a nice brown color on the outside. Do not cook all the way through.
  • Add chicken to the slow cooker.
  • Make the orange sauce by combining all the ingredients (not the water and cornstarch) into a bowl. Whisk to combine together. Pour over the chicken in the slow cooker and toss gently to make sure the chicken is coated.
  • Cook on low for 3-4 hours.
  • 30 minutes before serving, whisk together the 2 tablespoons of water and cornstarchΒ in a small bowl and stir mixture into the slow cooker. Cover and let cook the remaining time. This will help thicken the sauce.
  • Serve over rice and garnish with green onions.
