We have always been fans of rice bowls at my house. My kids love them because they can make their own bowl. Load up their rice bowl with whatever toppings they want. That’s my #1 tip for getting kids to eat. Let them make their own dinner plate. That’s why these rice bowls are so kid friendly!

The southwest chicken is a simple slow cooker mixture of chicken breasts, pinto beans, corn, salsa, chopped green chilies, and some seasonings. Let it cook on low all day and when dinnertime rolls around shred the chicken. My favorite part is when you go to shred the chicken and it literally falls apart at the touch. It’s so tender and bursting with delicious flavor.

Even with my family of 4 kids andΒ 2 adults (only 3 kids who eat) we had plenty of leftovers. Which means that you can get 2 meals out of this. I love to use the leftover southwest chicken to make quesadillas or baked tacos. Place some corn taco shells in a 9×13 baking pan and then fill each one with some meat and top with cheese. Bake at 375 for about 15-20 minutes. Baking the tacos brings out a toasty corn flavor and you can never go wrong with melty cheese.

Don’t forget the toppings. I always have to make my salsa verde ranch dressing to go on top. Seriously so good and you can make it in the morning. One less thing to do at dinner time. Serve with shredded lettuce, shredded cheese, pico de gallo, avocado slices, guacamole, green onions, jalapenos, olives, chopped tomato, sour cream and anything else you can think of.

The one thing you must not forget are the Fritos Scoops corn chips. Use the chips to scoop up the rice bowlsΒ or crush them and sprinkle them on top.

Ingredients

  • 3 large boneless, skinless chicken breasts (about 1 1/2 - 2 lbs)
  • 1 can pinto beans, drained and rinsed
  • 1 can corn, drained
  • 1 jar (16 oz) salsa, any variety
  • 1 can (4 oz) chopped green chilies
  • 1 teaspoon salt (or less to taste)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 recipe cilantro lime rice
  • toppings of your choice

Instructions

  • Place chicken breasts in the bottom of slow cooker. Add beans and corn.
  • In a blender combine salsa, green chilies, and seasonings. Blend until smooth and add to the slow cooker.
  • Stir together to make sure chicken is coated.
  • Cook on low for 6-8 hours. 1 hour before serving shred chicken using 2 forks, mix everything together and let it cook the remaining time.
  • Serve with cilantro lime rice (or rice of your choosing) and toppings of your preference.
