I’m going a little off topic today…….
There is still so much good in this world! I had an incredible experience yesterday that I wanted to share. I took my kids to the park yesterday morning and lost my cell phone there. I did’t realize that I had lost it there until about 4 hours after we had gotten home. I had absolutely zero hope of ever seeing my phone again.
It was not the phone I cared about. Yes, I LOVE my iphone and can’t live without it, but more than that I wanted those pictures. You see, my cell phone has all of my kids’ pictures from the last two years; vacations, birth of my daughter, birthday’s, preschool, first days of school, friends, and family. Just the thought that I would not have those brought me to tears yesterday as I wandered the park field hoping and praying that my phone would turn up.
Then I cam home and THE most amazing thing happened. I got onto Facebook and was browsing through my feed when there, right in front of me was a post to the ‘Hagerstown Yard Sale’ page [in the city where I live they have a yard sale FB page that has a very large following] saying,
“I found a phone at the park this morning and returned it to the Sprint store.”
I cried more. I was so happy. I messaged her and confirmed that it was my phone and then I went to the store and picked it up. I was so grateful that she had found it. I was so grateful that she was honest and had the decency to take the time, drive to the store, and turn it in.
I asked the employees if they knew her, knew if she had an account with Sprint so that I could pay her bill as a thank you, but I had no luck. I will find a way. I want to do something so badly because she was so kind, and so good.
Anyways, there is good in this world. Things like this restore my faith that people are still kind and honest.
I really have nothing to say about this salad that would top that story…… besides, you should try this. It is so beautiful with the bright colors, and it is delicious, and best of all, easy. I will say that if you pour the dressing on the salad, mix it up, and then serve it that way, it does not last long and will get soft/soggy rather quickly. I would advise making the salad, and then making the dressing in a separate bowl and people can dress their salad themselves.
- 1 bag (8 oz) baby spinach
- 1 cup sliced strawberries
- 2 avocados, chopped small
- 1/3 cup sliced almonds
- 1/4 cup feta cheese
- 1/3 cup mayonnaise, light or regular
- 1/4 cup 2% milk
- 2-3 tablespoons granulated sugar
- 2 teaspoons cider vinegar
- 1-2 teaspoons poppyseeds
- Combine the spinach, sliced strawberries, chopped avocado, almonds, and feta cheese in a large salad bowl. Gently toss together.
- In smaller bowl, whisk together the poppyseed dressing ingredients until creamy and well combined.
- Either toss the salad with the dressing, or put the dressing on the side and let people dress their own salad.
