We took the kids strawberry picking on Memorial Day and picked way too many berries! That seems to be my problem every time we go to the orchard. Every year we go strawberry, blueberry, and apple picking and every single time we pick way too much. It does not feel like a lot while were there soย I’m always saying “one more bag or one more quart” and then we get home and there are berries all over the counter!

Strawberries on Monday were no exception. We had so many and I had about 2 days to try and figure out what to do with them before they all went bad. Luckily we were able to make some strawberry freezer jam (2 batches!) and these strawberry streusel muffins.

I can’t say enough good things about these muffins. A soft, moist, cake-like muffin filled with little pockets of juicy strawberries. And the best part, is that sweet streusel topping.

The recipe makes exactly 12 muffins. When you fill the muffin cups they should be mostly all the way filled with batter. You then sprinkle lots of streusel topping on top and then they bake! Don’t be alarmed at the amount of streusel topping. It may seem like a lot when you are dividing it out amongst the muffins, but I promise that it’s supposed to be like that. Because we all know that more streusel = the best muffin ever, right?!

Ingredients

    muffins
  • 1/4 cup (4 tablespoons) butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 1/2 cup chopped strawberries
  • streusel
  • 1/4 cup (4 tablespoons) cold butter, diced small
  • 1/2 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar

Instructions

  • Heat oven to 375 and line a 12-cup muffin pan with liners. Spray the liners lightly with cooking spray.
  • In a large mixing bowl, beat butter and sugar together.
  • Add in egg and vanilla and beat until combined.
  • In a smaller mixing bowl, combine flour and salt. Stir with a whisk to break up any clumps.
  • Add the buttermilk and flour mixture into the batter, alternating between the two. Add half the buttermilk, blend together. Add half the flour mixture, blend. Repeat one more time.
  • Gently fold in the chopped strawberries. You want to mix the berries in lightly as not to discolor the batter too much.
  • Fill the prepared muffin tins with the batter. They will be full almost to the top.
  • Mix up all the streusel ingredients in a bowl and using your hands, fork, or a pastry blender mix together until it resembles a crumbly mixture. Sprinkle the streusel on top of the muffins.
  • Bake for 18-20 minutes.

So now I have 2 fun Kitchen Adventures planned for tomorrow; your Energy Bites & these Strawberry Muffins. I really like that you use buttermilk, it will give an extra flavor dimension ~for sure! And I guess I should make some of your Homemade Ranch Dressing w/ the remaining buttermilk ~lol... Seems as if I have made a wonderful "late night " discovery. Thank you & I look forward to visiting "your house" again...
