Β I found this recipe in a Taste of Home magazine and adapted it slightly by adding in some lime juice (totally necessary if you ask me) and changed up the rice. The original recipe calls for the ready-to-serve brown rice (like the Uncle Ben’s 90 second packs) but in my house we’re not crazy about the texture or taste of brown rice. Feel free to use the brown rice package, some leftover Mexican rice, or plain rice. Really any rice can be used as long as it’s equal to 1 cup.

As we were sitting down to eat these at dinner I was thinking of a name for them. They’re called ‘Texas Tacos’ not sure why? I asked my husband what he thought of the name ‘Sloppy Texas Tacos’ and he immediately shot that one down and said it “did not sound appetizing”. But really, they remind of sloppy joes but in taco form. They are yummy and messy! Oh and as you can tell, I just kept the name the same. I mean, why mess with perfection!

This hearty beef filling simmers on the stove top and the flavors combine and it’s really, really good. I also love this recipe because we always have tons of leftovers and I can get another meal out of it by making this TACO CASSEROLE and using the leftover taco meat .

NOTE- I do not add the additional onion and taco seasoning packet called for in the recipe. Just reheat the ‘Texas Taco’ leftovers with a tomato soup can + the water, let it simmer so the water reduces a bit and then follow recipe as stated.

Don’t forget the taco toppings; green onions (surprisingly, they are really good on these tacos), shredded lettuce, jalapeno, diced tomato, avocado, shredded cheese, olives. Be sure and add this one to your menu plan. It’s a quick, delicious, and family approved meal.

Ingredients

  • 1 lb lean ground beef
  • 1 red pepper, diced
  • 1 small onion, diced
  • 1 can (14.5) petite diced tomatoes, drained
  • 1 cup frozen corn
  • 1 can (8 oz) tomato sauce
  • 1 package (8.5 oz) ready-to-serve rice packet Pinto Beans & Rice
  • 1 packet taco seasoning
  • 1/2 a lime, squeezed
  • taco shells
  • taco toppings

Instructions

  • Cook ground beef, red pepper, and onion over medium-high heat until beef is no longer pink and vegetables are tender. Drain.
  • Stir in the tomatoes, corn, tomato sauce, rice packet (DO NOT COOK BEFORE), taco seasoning and the lime juice. Let simmer on medium-low heat for 10-15 minutes.
  • Serve in taco shells with toppings of your choice.

Notes

The rice is the Uncle Ben's 90 second rice pouch. It's in an orange package. Or use leftover rice.
