Oh boy, do I have a good one today! Birthdays in our house are always an excuse to make cake and have some over the top dessert. Contrary to the amount of desserts I post on the blog, I actually do try and limit the amount of sweets and sugars that we consume; especially my kids.Β 

But when it’s someone’s birthday all those rules go out the window. My kids often request this giant chocolate chip cookie cake for their birthday cake. You see the chocolate theme going on?! We love chocolate at my house.Β

I’ve had this easy chocolate bundt cake bookmarked for at least a year now and I knew that it would be the perfect birthday cake for my 33rd birthday. Yes I am 33! Ugh. I will never get used to the idea that I am now in my 30’s, been married for 10 years, and I have 4 kids. Like what?! I could swear that just yesterday I was in college and care-free.

This triple chocolate fudge bundt cake did not disappoint and it was the most perfect and chocolatey way to celebrate my birthday.Β 

It’s so easy to make! It starts with a chocolate fudge boxed cake mix, chocolate instant pudding, chocolate milk, and mini chocolate chips. And that’s just inside the cake. When it’s all baked and cooled you pour a simple milk chocolate ganache over the top.

It is so unbelievably moist. Like so moist that you may look at it and think it’s not done cooking yet. But it is! It’s so good and trust me when I say that you need to find a reason to make this.Β 

It’s so moist that even after it being left out (uncovered) on the counter all day and overnight….. it didn’t change anything at all! The cake was still moist and basically perfect. It was actually left out by mistake. My kitchen was a disaster and I decided that I would just ignore everything in there and go to bed πŸ™‚Β

I topped mine with some chocolate shavings; take a vegetable peeler to a chocolate bar or a baking bar. So easy and really pretty. You could also use sprinkles, mini chocolate chips, or just the milk chocolate ganache. You could also just cover it with a dusting of powdered sugar.Β 

I hope you love this one. It mixes up in one bowl and comes together in just minutes.Β

Ingredients

    chocolate fudge bundt cake
  • 1 box (15.25 oz) chocolate fudge cake mix
  • 1 box (5.9 oz) instant chocolate pudding mix
  • 1 cup sour cream
  • 1 cup vegetable or canola oil
  • 4 large eggs
  • 1/2 cup chocolate milk
  • 1 bag miniature semi-sweet chocolate chips
  • milk chocolate ganache
  • 1/2 cup milk chocolate chips
  • 1/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  • Preheat oven to 350 degrees. Prepare a 12-cup bundt pan by spraying generously with cooking spray.
  • In a large bowl combine the cake mix (dry mix, do not prepare), pudding mix (dry, do not prepare), sour cream, oil, eggs and chocolate milk. Stir together until well combined. Add in chocolate chips and stir to combine.
  • Pour batter into the prepare bundt pan. Smooth out the top.
  • Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean.
  • Cool cake in the pan for 1-2 hours before inverting onto a plate.
  • TO MAKE CHOCOLATE GANACHE: In a microwave-safe bowl combine the heavy whipping cream and milk chocolate chips. Microwave for 1 minute 30 seconds. Stir until completely combined. Add in the powdered sugar and stir to combine. Pour over the cake.
  • ** As the whipping cream heats it will boil up. Use a larger bowl than you need to allow for that. I use a 4 cup glass measuring cup and it never boils over in the microwave.

Notes

You can use any chocolate boxed cake mix you want. I just prefer the chocolate fudge one.

You can use water or milk in place of the chocolate milk if wanted.

I prefer to use the baking spray. It is cooking spray + flour. It helps the cake not stick to the pan.

    August 16, 2017 at 11:29 pm I made a similar recipe called chocolate fudge brownie cake that was easy and beautiful like this recipe, but it was too dry for me. So I tried this one and it was very moist! Much better than the other recipe. It did however have more ganache. 1 cup of cream and 12 oz of semi sweet chips. But I like your addition of powdered sugar. Anyway, I think I'll make it again and add extra ganache. I used white milk and too much accidentally, but it was still good. Thank you for the delicious and beautiful recipe .

I guess it's personal preference because I am not a frosting fan so I like less, but definitely if you love frosting then it can easily be doubled like you did.
