As I’ve mentioned before I get most of my recipe inspiration while I am grocery shopping. These tropical chicken salad sandwiches were literally born in my head while browsing at Costco. If you know me at all, you know that I am obsessed with Costco. Fun fact: my husband actually worked there while we were in college. Many years ago…. I feel old (and sad)Β just thinking about how long ago that was.

Costco has THE BEST rotisserie chickens. Ever! While there, I grabbed a chicken and began thinking of a way I could use it. These pineapple chicken salad sandwiches popped in my head and then I really started thinking of all the possibilities. Like tropical flavors!

Mandarin Oranges. Green Onions. Chopped Rotisserie Chicken. Coconut. Crushed Pineapple. Green Apple. Salted Cashews. Covered in a creamy dressing. If that list of ingredients does not make your mouth water then we can’t be friends. Just kidding. You guys are the best!

Combine everything in a bowl and stir together. I prefer to make these the morning of the day I need them and then let them sit in the fridge all day. Plus, you don’t even need an oven to make these so it’s perfect for the hot summer days. And the leftovers are pretty much the best thing ever.

Ingredients

    tropical chicken salad
  • 1 rotisserie chicken, chunked
  • 1 cup sliced celery
  • 1 cup salted cashew halves
  • 1/2 cup shredded coconut
  • 1 small bunch green onions, thinly sliced
  • 1 granny smith apple, peeled and chopped
  • 1 can (11 oz) mandarin oranges, drained (reserve 1 tablespoon of juice)
  • 1 can (20 oz) crushed pineapple, drained (reserve 1 tablespoon of juice)
  • dressing
  • 1 bar (8 oz) cream cheese, softened
  • 1 cup mayonnaise
  • 2 tablespoons reserved fruit juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder

Instructions

  • Combine all the chicken salad ingredients into a large mixing bowl. Stir together.
  • In separate smaller bowl, combine the dressing ingredients and stir together until combined and creamy. To get the cream cheese soft (which prevents lumps) place in the microwave for about 20 seconds.
  • Pour the dressing over the chicken salad mix and stir together well.
  • Cover and let refrigerate for 3-4 hours before serving.
  • Serve with croissants or your favorite rolls.

Notes

Don't let the curry powder scare you. The curry powder plus the coconut, plus all the fruit really is so good and the flavors compliment each other perfectly.

If you don't want to use a rotisserie chicken, then use 3 cups chopped chicken.
