Finely ground graham cracker crumbs Butter melted Softened butter for the pan Full-fat cream cheese softened Granulated sugar Cornstarch Full-fat sour cream Large eggs Large egg yolk Vanilla extract Frozen raspberries Water
Combine melted butter and graham cracker crumbs in a bowl. Stir together until the mixture resembles wet sand. Press the crust into the bottom of the springform pan. Bake the crust for 8 minutes.
Combine the softened cream cheese, sugar, and cornstarch in the bowl of a stand mixer fitted with a paddle attachment (or use a handheld mixer).
Add the sour cream and vanilla to the bowl and beat on medium-low speed until combined and creamy. Scrape down the sides of the bowl with a spatula.
