STRAWBERRY SPINACH SALAD WITH STRAWBERRY POPPY SEED DRESSING

Fresh spinach leaves topped with juicy, ripe strawberries, crumbled feta cheese, and sugar toasted almonds and covered in a strawberry poppy seed dressing.

This strawberry spinach salad can be made ahead of time and is really delicious as a light lunch or take it to a gathering for a delicious side dish.

Strawberry Spinach Salad – baby spinach stems – strawberries – feta cheese – toasted almonds

Ingredients

Strawberry Poppy Seed Dressing – strawberry yogurt – granulated sugar – milk – sour cream – mayonnaise – apple cider vinegar – poppy seeds

Ingredients

Toasted Almonds – sliced almonds – butter -  granulated sugar

Ingredients

Add the spinach into a large mixing bowl (or whatever bowl you are planning on serving the salad in).

Add the sliced strawberries, crumbled feta cheese, and toasted almonds.

Add the almonds, butter, and sugar into a skillet pan and cook over medium-high heat.

Add all dressing ingredients into a bowl and mix together well with a whisk.

Pour the dressing over the salad and mix together until all the spinach leaves are coated in dressing.

Place the spinach in the mixing bowl. Put the strawberries, feta cheese, and toasted almonds in their own seperate containers. Mix up the dressing and put that into a container.

WILL LEFTOVERS KEEP WELL? – I think this salad is best eaten after making it.

SHOULD I TAKE THE STEM OFF THE SPINACH? – I always tear the long stem off the spinach before adding it into the salad bowl.
