Easy Minestrone Soup Recipe is made with ground beef & frozen vegetables for convenience. This minestrone soup cooks on the stove top in one pan and can be on the table in just 30 minutes for a healthy family dinner.
1can(15 oz) kidney beans or white navy beans(drained & rinsed)
1can(6 oz) tomato paste
1package(16 oz) frozen mixed vegetables
2teaspoonsItalian seasoning
1/2teaspoongarlic powder
1/2teaspoondried basil
1/2teaspoonsalt
1cupsmall shell pasta(uncooked, dry pasta)
Instructions
In a soup pot, over medium-high heat, brown and crumble the ground beef, onion, salt and pepper until beef is no longer pink. Drain.
To the ground beef, add the beef broth, diced tomatoes, beans, tomatoes, tomato paste, frozen vegetables, and seasonings. Bring to a boil.
Once boiling, add the dry pasta and reduce heart to medium. Let cook/simmer for 10 minutes. Make sure the pasta is cooked through and serve!
Once the pasta is cooked, you can turn the heat to LOW and let it simmer on the stove top until you need it.
Notes
To make this in the slow cooker - Brown and crumble the ground beef with the onion, salt, and pepper. Drain and add it into the slow cooker. Add the remaining ingredients (not the pasta) and let it cook on LOW heat for 5-6 hours. 30 minutes prior to eating, add the dry pasta and let it cook the remaining 30 minutes. The seasonings are very adaptable for this recipe. Add some or increase a seasoning if you love it!Small shell pasta is the best to use or ditalini pasta and elbow pasta are other good ones. You want a small pasta that will cook within that 10 minute cooking time.
