Ingredients
1box (15.25 oz)yellow cake mix
1/2cupvegetable or canola oil
2largeeggs
1cuptoffee bits
Instructions
Heat oven to 350°. Prepare a cookie sheet (12"x18") by lining with parchment paper, silpat liner, or spray with cooking spray.
In a large mixing bowl, add the cake mix, oil, eggs, and toffee bits. Mix until the batter is well combined. You can either use a wooden spoon to mix this or a hand mixer.
Scoop about 2 tablespoons of dough (medium size cookie scoop) and place 12 per cookie sheet.
Bake for 9-11 minutes. * You don't want the cookies to get golden brown color on the edges, which means they have cooked too long. Cookies should look done and puffy. Tops of the cookies should not look wet.
Allow the cookies to cool on the cookie sheet for 5-10 minutes and then remove them to a cooling rack to cool completely.
Notes
Toffee Bits : If you can't find the toffee bits buy some full-sized Skor bars and chop them up. They will have some chocolate in it, which is fine, so the cookies will not turn out exactly like the pictures.Cake Mix : Any brand cake mix will work just make sure you are using one that is 15.25 ounces in size. Leftovers/Freezing : Store leftover cookies, in an air-tight container, at room temperature for up to 4 days for maximum freshness. Cookies can be frozen, once baked and cooled, in a freezer safe container for up to 1 month.Tip : Use any cake mix + any add ins you want! So many possibilities with this recipe.
