Ranch Potatoes are oven roasted potatoes that only need 3 ingredients! So simple to make with baby potatoes, olive oil, and ranch seasoning mix. These roasted vegetables are a great side dish to any dinner!
Preheat oven to 450° F. Line a half sheet pan (aka - cookie sheet, 13"x18") with parchment paper.
Cut each baby potato in half and place them into a mixing bowl.
Add the olive oil and ranch seasoning mix into the potatoes and mix until all the potatoes are coated well.
Spread the potatoes into an even layer (avoid touching or overlapping of the potatoes) onto the prepared sheet pan.
Cook for 30-35 minutes or until the potatoes are golden browned and crispy on the edges. * The cook time will vary depending on the size of the potato pieces you are using.

Olive Oil : Regular olive oil can have a very heavy taste which is why I prefer to use extra virgin 'light tasting' olive oil when I make this recipe. Any olive oil can be used, it just depends on preference. Potatoes : I recommend using the yellow baby potatoes because they have a creamier and sweeter taste to them. Baby red potatoes can be used. You can use regular potatoes but be sure you cut them into small pieces (about 1/2 inch to 1 inch in size).Ranch packet : Do not prepare this before using it. Just dump in the dry powder seasoning contents from the packet. One packet of ranch seasoning mix is equal to 2 tablespoons, if you are measuring from a larger jar of it.
