Blackberry Cobbler

Ingredients

  • 1/2 cup salted butter melted
  • cups all-purpose flour
  • 1 cup white granulated sugar
  • 1 cup whole milk
  • 2 teaspoons baking powder
  • 2 cups fresh blackberries washed & patted dry

Instructions

  • Preheat oven to 350° F. Prepare a 8x8 baking dish by spraying lightly with cooking spray.
  • Pour the melted butter into the baking dish.
  • In a mixing bowl, add the flour, sugar, milk, and baking powder. Stir together until combined well and no dry flour streaks remain.
    * You can use a wire whisk, a wooden spoon, or silicone spatula to mix this together.
  • Pour the cobbler batter into the pan over the melted butter. Sprinkle the blackberries on top of the batter. Do not stir the berries in. Just sprinkle them on top and leave them.
  • Bake for 40-45 minutes or until the cobbler topping is cooked through and the top is lightly browned.
  • Serve immediately with a scoop of vanilla bean ice cream.

Notes

Nutrition Information : This does not include the ice cream topping. It's also for 6 servings, which might be large for some people but especially if serving kids too. The calories will be lower if serving more than 6 from this recipe. 
Blackberries : Make sure to wash these and then use a paper towel to blot and pat dry any excess moisture from the berries. You don't want to add wet blackberries onto the top of the batter. 
Butter : Salted butter is preferred. If using unsalted butter, you may want to add a pinch of salt in with the other dry ingredients. 1/2 cup of butter is equal to 1 stick of butter OR 8 tablespoons butter. 
Serving Suggestions : We love this with vanilla bean ice cream, but you could also serve it as is or serve with some whipped cream (either homemade or from the spray can).
