Ingredients

  • 1 tablespoon olive oil
  • white onion finely diced
  • 1 pound lean ground beef
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 clove garlic
  • 1/2 cup ketchup
  • 1/4 cup chopped dill pickles
  • 1 tablespoon yellow mustard
  • 2 teaspoons dill pickle juice (from the pickle jar)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon light brown sugar

Toasted Buns

  • 6 hamburger buns
  • 6 slices American cheese (I use Kraft singles)
  • spreadable/soft butter

Instructions

  • In a skillet pan, over medium-high heat, add the oil and chopped onion. Cook until softened and slightly translucent, about 3-4 minutes.
  • Add the ground beef, kosher salt, black pepper, and garlic. Cook and crumble until ground beef is no longer pink.
Drain the excess grease/moisture from the pan.
  • Add the ketchup, chopped dill pickles, mustard, pickle juice, worcestershire sauce, and brown sugar. Stir to combine.
  • Simmer for about 5-10 minutes, while stirring occasionally, so the flavors can develop and any extra liquid/sauce can thicken.
    * Turn down heat as needed
  • While meat is simmering toast the hamburger buns. Lay out both sides of the hamburger buns onto a cookie sheet. Spread butter on each of them. Broil until toasted and lightly browned, about 2-3 minutes.
Place a slice of American cheese on each top side of hamburger bun and broil again for about 1 minute, or until the cheese is melted.
  • Serve a scoop of cheeseburger sloppy joe mixture onto each bottom bun and then place a cheesy top bun on it.

Notes

Ground Meat : Feel free to swap the ground beef with ground turkey for a healthier recipe.
Olive Oil : Regular olive oil has a very heavy taste to it so I always use extra-virgin 'light tasting' olive oil anytime a recipe calls for olive oil. It's a much more neutral oil taste. You can also use canola or vegetable oil, or whatever other cooking oil you prefer in place of the olive oil.
Garlic : Use a fresh garlic clove that has been minced or pressed. Garlic paste from a tube. Use chopped garlic from a jar. Any of them will work just fine.
Toasted Hamburger Buns : This is an optional step but I highly recommend doing it. The toasted bun with the melted cheese on it really makes these sloppy joes amazing. I just use spreadable butter from a plastic container. Feel free to use any spreadable or soft butter that you prefer. Even margarin from a tube will work great too.
